Description
After studying viticulture and oenology in Beaune, Simon Lecomte sets out on a journey to meet avant-garde winegrowers. He draws on their words and practices and returns to Burgundy to set up a brewery there with the aim of transposing oenology and winemaking processes to the development of his beers. He begins by filling around thirty barrels which he stores with fellow winegrowers. In 2018, he set up the brewery in Sens, a small hamlet of Sennecey-Le-Grand, following the discovery of an old virgin 17th century barn. After several months of work to rehabilitate the place, he installed his tanks there and continued the work initiated a few years earlier. It was not until spring 2019 before the first beers were released from their barrels

Craft Beer Junction. Xmas bottleshare. 2021 vintage. Clear gold beer, no head. Light and fairly dry palate, decent fine carbonation. Tart guezey fruits, some acetic burn. Big overripe pear and a little apple. Light and semi dry finish. Not bad.

Bottle. Color: Very pale, slightly hazy golden. Fast disappearing white head. Aroma: Marzipan, almond, vinuous hints. Taste: Medium tart, vinegar notes, vinuous, dessert wine notes, marzipan, almond. Just below medium body, just below average carbonation. Bit thin. Interesting but I was expecting more from my first Ammonite beer.

Orange. Thicker than a shake! Aroma has sharp fruit and vinegar. Taste is similar. Nicely tart, edges towards vinegar. Lots apricot (obviously)

Straw blond colour with light haze and quick fading head. Aroma has lemon zest and juice and also a strong note of dried herbs and dried flowers. Tart, dry, earthy, floral. Pickle juice, vinegar.
