Description

After studying viticulture and oenology in Beaune, Simon Lecomte sets out on a journey to meet avant-garde winegrowers. He draws on their words and practices and returns to Burgundy to set up a brewery there with the aim of transposing oenology and winemaking processes to the development of his beers. He begins by filling around thirty barrels which he stores with fellow winegrowers. In 2018, he set up the brewery in Sens, a small hamlet of Sennecey-Le-Grand, following the discovery of an old virgin 17th century barn. After several months of work to rehabilitate the place, he installed his tanks there and continued the work initiated a few years earlier. It was not until spring 2019 before the first beers were released from their barrels

Bottle pour at Arrogant Sour Festival 2022. Cloudy golden yellow with small white head. Stone fruit, grapes, vinous, barrel, medium acidity. Nice.

Bottle pour at Arrogant sour Festival. Pale cloudy yellow with small white head. Bit vinous, citric, somewhat acetic. Medium bodied.

On tap at Arrogant Sour Festival 2022. Hazy orange with small white head. Some grapes, red fruit, moderate sourness. Quite balanced.

Flaska från Etre. Blekgul disig med vit krona. Något mer kolsyra än III:an. Doftar äppelmust, färska gröna druvor, gröna äpplen och en oerhört distinkt ton av carambola. Samma i smaken. Massor av carambola, beska från skal, färska/omogna gröna druvor, rabarbersyra. Syran är något oerhörd och det smakar mer eller mindre hälsovådligt. Njae...

Flaska från Etre. Disig blekgul med liten vit krona. Lätt svavelton, mycket citrus och citronjuice, päronjuice, färska gröna druvor. Citronsurt, lite obalanserat och onyanserat.
