Description
After studying viticulture and oenology in Beaune, Simon Lecomte sets out on a journey to meet avant-garde winegrowers. He draws on their words and practices and returns to Burgundy to set up a brewery there with the aim of transposing oenology and winemaking processes to the development of his beers. He begins by filling around thirty barrels which he stores with fellow winegrowers. In 2018, he set up the brewery in Sens, a small hamlet of Sennecey-Le-Grand, following the discovery of an old virgin 17th century barn. After several months of work to rehabilitate the place, he installed his tanks there and continued the work initiated a few years earlier. It was not until spring 2019 before the first beers were released from their barrels

billie's craft beer fest 2022; When drinking I swallowed the wrong way, acidburn in my lungs and coughing. The abricot taste could have given a good beer, but is overtaken by acetic taste.

Bottle big thanks to my bro. It pours clear very pale gold with a dissipating white head. The aroma is musty, funky, barnyard, hay, must, straw, soft sweet, poopy, manure and silage. The taste is crisp, dry, tart, lemon - lime, gooseberry, white grape, vinous, sherbet, bright acidity, minerality, barnyard, hay, straw, dry oak, puckering, sour, tangfastics and light tannin with a drying finish. Medium body and light carbonation. Puckering and bright. Fun stuff.

Pours unclear blonde. Small white head. Scent is sweaty, salty tartness. Taste is taret, dry, rather salty, astrigent. Bit citrus. Not overly fresh. Remains a bit sweaty allover ... Not a big fan

Pours unclear blonde. Scent is full, dirty cloth, rough herbal side to it. Sharp. Taste is sharp as well, tart, herbal/floral, acidic. Not my thing.

Pours hazy blonde, no real head. Scent is herbal, honey, sharp, plastic, very weird. Taste is tart, dry, funky, herbal, raw and rough.

One of a few dozen of beers dedicated to the deceased French bulldog that gave his name to both the Antwerp craft beer pub and the festival, this time a sour ale by Ammonite, slowly beginning to make a name for itself outside of France in craft beer circles. Thanks Bjorn and Sara for sharing! Moussy, egg-white, open head, misty straw blonde robe with vague greenish tinge. Aroma of apple vinegar (very strongly so), actual green apple, green pear, some wood, lemon, white currant, old red wine, lime zest. Sharp, puckering sourness in the onset, very lemony, green apple and crushed green gooseberry, fizzy carb, hint of white currant; wheaty slickness and soapiness underneath ongoing green-fruity acidity, some bready notes, slight woodiness in the end and a vague green weed-like bitter accent but these apple vinegar and lemon juice flavours keep prevailing. Odd little sour, very distinct in its own way, but not really my cup of tea, to be honest.
