Description
We created our micro-brewery in May 2016. A stroke of love prompted us to install our vats in Mancy, a small village located south of Epernay. After several years spent in the magnificent hamlet of Alencourt and a production reaching nearly 300 HL in 2019, we had to think bigger!

At the end of 2019, after extensive research, we acquired a building located in the heart of Epernay. The capital of champagne now has its own craft brewery!

On approximately 900 m2, an old Champagne past blends with an industrial spirit. Numerous concrete vats bear witness to the succession of winegrowers who worked in these walls. A magnificent 300 m2 cellar is used to store our finished beers in a naturally temperature-controlled space.

Our beers are brewed in the traditional way, in single stage infusion. They are neither filtered nor pasteurized. The lees (yeast deposit at the bottom of the bottle) comes from the refermentation in the bottle.

T: medium malty base, grapefruits, mellow tropical fruits, bit caramel, bready, medium carbonation, slightly more one the sweet side yet nice balanced bitterness too, ok for the style, enjoyed.

33cl bottle (with strawberries and rhubarb, hop: Barbe Rouge (Alsace), IBU 22) form COIN DE NATURE Organic shop in Pierry, France. F: gusher alert, big, off-white, good retention. C: gold, hazy. A: strawberries and rhubarb, bit herbal. T: medium malty base, strawberries, herbal, lemon, rhubarb, decent bitterness, medium carbonation after small gusher, ok, refreshing but this combo is not for me.

Aroma is grapes, citrus, orange, light tropical fruits, pineapple, spicy. Taste is medium malty base, orange, grapefruit, pineapple, long lasting bitterness, grapes touch, bit herbal-spicy, medium to high carbonation, nice refreshing beer, enjoyed for sure.

33cl bottle from supermarket E.Leclerc PIERRY, in France. F: big, tan, good retention. C: amber, hazy. A: malty, light orange fruity, honey, floral, some mellow tropical fruits. T: medium to full malty base, orange, bit dusty, mellow tropical fruits, decent bitterness, medium carbonation, quite nice yet American Tripel is something like Russian Saison strange style combo beside this ok beer, enjoyed.

A: malty, light citrus, bit lime, fruity, bit banana, floral. T: medium malty base, bready, mellow fruity, dry on the palate, bit yeasty, citrus touch, medium carbonation, bit herbal, quite prominent bitterness for 18 IBU, ok again not bad yet nothing really special, enjoyed. 33cl bottle @ Clos La Chapelle in Mareuil-sur-Ay, France. Medium, white, average retention head. Colour is pale gold light hazy. Aroma is wheat, a lot of gingembre, banana touch. Taste is medium malty base, bit wheat, coriander, light banana, dry on the palate, medium carbonation, good balanced beer, more coriander but I like it.
