About
Falling Knife Brewing Company started in the music venues of the Twin Cities. Recognizing a shared love of music, basketball, and of course, beer, Andy, Tom, and Dan moved from serious conversations amongst friends to a brewery-in-planning in the summer of 2017. After looking at several locations, the ownership team fell in love with the Mid-City neighborhood. Construction on the new space started in late 2018, and we opened our doors in summer 2019.

Falling Knife is a production brewery that features a 20-barrel brewhouse producing incredible beers, and a full-service 149-person taproom. We currently service select keg accounts with packaged beer shortly forthcoming.

- [ ] 750 ml bottle. Aroma has bold vanilla, caramel, soft oak. Flavor follows with the addition of sugar coated figs. Some soft alcohol notes after the sip. Decent for sure.

750mL bottle, undated, from Chalumeaux, drunk 9/16/23. Clear deep amber. Small, beige head quickly to ring. Oh yeah, toffee and vanilla, nicely barreled is super mellow, yet great richness from bourbon. Has that Maker's vintage feel, very woody, with none of the somewhat sharp, hot Woodford character. Wood and oak really balances the vanilla, raisin, toffee of the base beer. Very fruity, very English, no booze. Soft, fruity, heavy oak and wood, very soft and mellow on the bourbon with woody notes and lots of lingering vanilla, toffee, raisin. These bourbons do a great job of balancing the malt. Soft, rich, malty, but with good attenuation and balancing bourbon dryness and spiciness.

Bottle pour shared by Chalumeaux--thanks, TJ! It's a hazy maple syrup with ring of off white head. Aroma is strong caramel, fig, bourbon, vanilla. Taste is strong caramel, fig, bourbon, oak. Mouthfeel is smooth, medium bodied, soft carbonation, finish is oaky yeasty bitterness. Overall, aroma and flavor are all there but the finish is unsatisfying.

Aroma is wood, oak, toffee, raisin. Taste is smooth, plum, fig, caramel, vanilla. Barrel treatment is splendid. This is a wonderful sipper.

Sampled from the tap at First Draft. Pours a clear dark brown with an earthy brown head that dissipates to the edges. Aroma has a nice combination of roast and pine with a creamy dark grain backbone. Flavor has dry dark grains and bitter pine with a bit of earthy roast underlying.

Sampled from the tap at GTMW 2023. Pours a clear crisp yellow gold with a white head that dissipates to the edges. Aroma has a good amount of straw with light lemon, some grass a bit of hay. Flavor has hay and grass with a bit of flora and some sweet lemon coming through.

Sampled from the tap at GMTW 2023. Pours a murky brownish amber with a yellowish brown head that dissipates to the edges. Aroma has a beautiful caramel bourbon note with sweet grains and toffee coming through. Flavor has a nice bourbon and sweet grain combination with caramel and light toffee supporting.

Pours a moderately hazy, lemon-pineapple color, with smallish head. Aroma is dank, with some gasoline, citrus, tropical fruit. Flavor is citrus and tropical fruit, with some saison-like pepper/spice. Moderately bitter finish. Soft mouthfeel.

Sample at GTMW 2023, 8/12/23. Hazy Cooper (I assume I meant copper), no head. Aroma of toffee, raisin, cherry, stone fruit. Taste is toffee, raisin, citrus, and toffee again. Full bodied, hot.
