A passion that defies time! Let’s go back through history: it was in 1740, in Haubourdin, that my ancestor Célestin Cordonnier created his brewery. A passion that defies time! Let’s go back through history: it was in 1740, in Haubourdin, that my ancestor Célestin Cordonnier created his brewery.

Eight generations of brewers follow one another faithfully, each bringing their own touch of know-how and excellence. After 60 years of interruption, I take up the family torch with pride, and pay tribute to my grandfather and his intuition: the CÉLESTIN micro-brewery was born in 2014 in Old Lille.

Linked to almost 300 years of family brewing history, the Célestin brewery is known to be one of the region’s first micro-breweries to set up in an urban setting. It is in the heart of Old Lille that Amaury, descendant of a family of brewers, sets up his micro-brewery and a beer cellar.
Due to the success of the brewery, a second production site was opened in 2017 just outside the center of Lille.

T: full malty base, grapefruits, orange, bit tropical fruits, grapes, caramel, dry on the palate, nice balanced bitterness, good for the style, enjoyed for sure.

A: dark malts, chocolate, bit woody, red wine, dark dried fruits, plums. T: full malty base, stout as a base beer is obvious, bit red wine, woody, chocolate, cocoa, dark dried fruits, tobacco touch, soft carbonation, good one yet not great, enjoyed.

A: malty, herbal, spicy, bit orange, green onion, grapefruits, banana, nice floral hoppy all together. T: medium to full malty base, spicy, orange, herbal, floral, decent bitterness, banana, medium carbonation, interesting connection for 10 different hops probably hardly to be harmonic yet quite nice balanced still for me, enjoyed.

A: a lot of tangerine, orange, bit mango, pineapple, nice fresh fruity. T: light malty base, orange, grapefruits, bit pineapple, pine resin, prominent long lasting bitterness, medium carbonation, very nice balanced, fully enjoyed.

Bière 33 cl bue au v&b de Villeneuve d'Ascq puis à la maison (achetée aux vins gourmands). Mousse imposante, blanc éclatant, persiste longuement. Robe d'ambre à cuivrée, avec une légère opalescence. Des notes d'orange et de pamplemousse dominent, avec une légère touche épicée et des nuances de fruits tropicaux. Base maltée prononcée, avec des saveurs de pamplemousse, d'orange, et une subtile présence de fruits tropicaux, de raisin et de caramel. Finale sèche en bouche, avec une amertume équilibrée, parfaitement conforme au style de la bière. Une dégustation appréciée, sans pour autant être ma favorite en la matière.
