After several years spent in the production of wines in various regions of France and the world, and a few beers made as an amateur in the family kitchen, during winemaking in 2006 in the United States Emmanuel Rey discovered the extent of the micro brewery phenomenon. in this country.
We are in December 2006. Everything is quickly linked: an internship at the Brasserie Sancerroise in July 2007 to discover “real size” brewing, a training course at the IFBM in Nancy and numerous tests in the family kitchen to highlight point the recipes. At the same time, the search for the place of installation was carried out with the help of the Regional Natural Park of the Haute Vallée de Chevreuse and a place was quickly found near the town of Bonnelles. The project is finally launched!

Bottle 33 cl. Courtesy of yespr. Pours a clear golden with a tiny, rough white head. Medium body, almost flat, sweet malty and fruity. Subdued bitterness. I think this bottle wasn’t fresh or has had a slight leak. 110110

Bottled. A hazy amber beer with a thin off-white head. The aroma has notes of malt and fruits. The flavor is sweet with notes of malt, spices, fruits, and some alcohol, leading to a dry alcolic finish. Thanks yespr for sharing.

75 cL bottle. Pours clear and golden orange with a small white head. Aroma is dry malty and phenolic yeasty. Sweet caramelish and malty flavoured. Mild roasted and lingering caramelish into the finish. Dry and malty into the far finish. Dry lasting impression. Smooth and spiced.

75 cL bottle. Pours cloudy orange with a small white head. Aroma is dry wheaty and spiced, slight acidic. Phenolic and sweet fruity flavoured. Smooth caramelish and light fruity into the finish. Light spiced. Rather phenolic.

Bottle from La Cave à Bulles. Dark brown color with a fizzy tan head. Aromas of chocolate and darkly roasted malt. Med. minus body and fizzy carbonation. Pretty much chocolate over dark malt. There is fruit and spice in background, but the chocolate is dominant. And it is dry. Good ale.
