Our aim is to make cider as naturally and with as little intervention as possible.
That means using wild yeasts, ambient temperatures, with no additions, fining or filtration. A pure expression of the fruit, as nature intended.
The traditional style orchard has been active for over 100 years, once producing cider and perry for those working on the farm. Tree numbers had dwindled over the years until replanting efforts in 2001 and 2019 brought numbers back to around 200 trees with a rich varietal mix of culinary and cider fruit. This forms the backbone of our cider, creating an exciting modern juice blend.
