I believe this is my first Choryo beer. They’ve been around a few years but cans/draft is fairly pricey for domestic craft (8-900¥) so I hadn’t tried them yet. I wanted to try their Italian Pilsner but it wasn’t on tap yet so I gave this a shot: Choryo Helles 5% 17 IBU Clear gold with wispy white foam and a tangy grape herbal hop and grainy malt aroma. Medium bodied crisp and clean. Bready malts with herbal hops the only thing I find not so to style is that slightly sour tang. Overall pretty good. @craft Beer live 2023

Sake brewery built a big shiny brewpub out in Nara apparently. It sounds like a cool place. Choryo IPA GALAXY Hazy IPA Hazy gold with an orange tint and juicy aroma but the medium bodied brew tastes a bit tough. Not too bad though. ——2nd try 9/28/2022— Chiyo Hazy IPA Galaxy Take out tap in Nara. It has a decent Galaxy fruity hop aroma and medium body. The color is a matte gold with white foam. The taste is a bit rough and overly bitter for a hazy but it’s still a decent beer. 600¥ is also a good price these days.

(My vote 6.4/10) Drank cold. The appearance of the liquid is foggy. The olfactory intensity is normal, and the olfactory persistence is sufficient. The taste on the nose finds impressions of vanilla and banana for a delicate aroma. The first impression of intensity in the mouth is of undecided sake. The aroma on the tongue is medium dry. The body is round. The gustatory intensity is normal, and the gustatory persistence is sufficient. The final mouth sensations are easy to drink. The roof of the mouth carries vanilla, peach, honey, popcorn, pineapple, dried fruit, grapefruit and umami. VARIATIONS Plus, drunk at room temperature (My vote 6.6/10) The liquid offers a cloudy vision. The olfactory intensity is faint, and the duration is short. The taste on the nose recognizes almond, anise, mineral and kiwi. The first impression of intensity in the mouth is of medium strength’s sake. The body is round. The taste intensity is normal and sufficient persistence. The final mouth sensations are easy to drink. The palate ends with hints of cooked rice, vanilla, strawberry, banana, popcorn and tropical fruit for a delicate taste. VARIATIONS Plus, drunk hot (My vote 6.4/10) The consistency of the liquid is cloudy. The olfactory intensity is normal and sufficiently prolonged. The nose taste - dominant aroma is of malted rice Koji. The nose taste - secondary aromas are of white peach, honey, popcorn, anise and soy. The first impression of intensity in the mouth is of medium strength’s sake. The body is round. The taste intensity is normal and sufficient persistence. The final mouth sensations are easy to drink. The roof of the mouth ends with impressions of milk, yogurt, fruit, pear and mushroom.

Bottle pour at Asano. Shiny and clear. Huge cedar nose, light vanilla, lemon. Ok level of taru flavor, not too much cedar to overwhelm but not a lot of yamahai character and a bit thin.

Drank at room temperature. The consistency of the liquid is clear. The olfactory intensity is high, and the olfactory persistence is appreciable. The taste on the nose - dominant aroma recognizes malted Koji rice. The taste on the nose - secondary aromas harmonizes with white peach, melon and plum. The body is full. The taste intensity is high, and the taste persistence is good. On the palate the aftertaste is intense. The taste is pleasant. The final mouth sensations are ready to drink. On the palate arrive hints of vanilla, white peach, dried fruit and strawberry.

Bottle shared at Leighton's place at the Ktwse tasting, 12/12/2017. A very clear almost colourless, no head. Aroam is solvent, woody, fragnant, cedar, spicy peppercorn. Palate is semi sweet, solvent, no solvent. Flavour is composed of spicy woody, cedar, crisp finish, .

Bottle at home at first didn’t buy thinking it was other Choryo taru but my sake guy said oh no no this is new Yamahai version he then explained the process etc and it was quite interesting. Very clear pour. Nose is light cedar and florals. Tastes of cedar, light vanilla luckily none of that sweet garbage you get with many tarus, floral, hint of stone fruit. Medium bodied. Really delightful from a style that you don’t always expect quality from.

300ml bottle. Clear with a slight yellowish tinge, no head and nose of rice, fruity, wood, spice. Flavour is sweetish, rice, caramel, wood, peppery, earthy, grassy, with warming alcohol. Oily mouthfeel, medium bodied, low carbonation, dry warm earthy through to a clean finish. Nicely drinkable.
