Après une formation d'œnologue et un apprentissage notamment au sein de la brasserie Cantillon, Aymeric Tissot a installé sa brasserie dans le centre de Besançon avec l'objectif de réaliser des bières de fermentations naturelles.
L'affiliation au domaine familial, Mireille et André Tissot, lui permet de se procurer de magnifiques barriques pour ses élevages, ainsi que du raisin, des marcs et des lies de vins qui lui permettent de sublimer ses cuvées. .............................................
After training as an oenologist and an apprenticeship notably within the Cantillon brewery, Aymeric Tissot set up his brewery in the center of Besançon with the aim of producing beers from natural fermentations.
Affiliation to the family estate, Mireille and André Tissot, allows him to obtain magnificent barrels for his maturing, as well as grapes, marc and wine lees which allow him to sublimate his cuvées.
Bottle sample at Vin Natuur in Groningen poured by the brewer Americ (sp?). Cloudy yellow color white head. Beautiful aroma of perfume and fresh flowers. Taste is vinous floral and lightly funky. Delicious

750ml bottle pours out pale straw topped with a small fizzy head. Nose is funky cheese barrel notes some grape plums and berries. Taste is more of the nice sweet tart grapes a little berry funky barrel and wine.
750ml bottle pours out hazy straw topped with a white head. Nose is pepper lemon grass zest some funky barrel notes. Taste is more of the nice lemon zest some citrus pepper and barrel notes.
750ml bottle pours out rose peach color topped with a fizzy head. Nose is barrel funky notes some grape oak and some leather. Taste is more of the nice oak barrel some grape wine notes oak and funky cheese.
750ml bottle pours out hazy pale straw topped with a white head. Nose is crazy big sichuan pepper spice notes some yeast wild funky baller notes. Taste is no pepper so wild, more of a light funky barrel note a little fruit maybe. Wow this one was super fun to try.
