We are incredibly interested in various methods of fermentation. We are experimenting with spontaneous fermentation, wild yeasts and ageing our beers. This is where our foeders and barrels come in. We have three foeders and over 30 barrels used to age some unique beers. This is a waiting game; it can take a few years to get results.

Can at home in Crumlin picked up from Tesco. A hazed golden yellow coloured pour with a a sticky white head. Aroma is floral, pollen, passion fruit, midget gems,. Flavour is composed of flaky wheat, talus hop, opal fruits creany wheat, white grape, melon. Palate is semi sweet, creamy, highish carbonation. Good stuff.

Sampled from the tap at Woodworkers. Pours near black with a thin light brown head that dissipates quickly and nearly completely. Aroma has a good amount of roasted malts and dark grains with just a hint of bitter chocolate underlying. Flavor has smooth dark grains and growing roast with just a bit of earthiness backing.

440ml can from KWM Wines: BB 1st December 2024. Drank at home on 3rd February 2024, poured into a UK pint sleeve. Misty golden amber, a dark gold (not a Light Up Gold), off-white crust on top. Nose is resinous with a citrus undertone, taste also has both flavours along with a decent malty semi-sweetness. It's fine.

Can shared at CBJ - cheers to Cloin. Pours clear yellow-gold with a creamy, white head. Medium sweet flavour with notes of semi-ripe citrus, pale bread. Medium bodied with fine to average carbonation. Sweet pale malts finish, ripening lemon. Not bad.

Craft Beer Junction bottleshare, thanks to Cloin for the can. Clear gold beer, small pale cream colour head. Thin creamy malts. Fruity esters. A little dried fruits. Dry finish. Tastes like a Delirium. Fine.

Bottle split at the CBJ share, picked up from KWM wines in Kilkeel, 11/01/2024.
Clear golden orange topped with a good sized just off white head.
Nose is stewed fruits, herb, fruit slice, dates, sultanas.
Taste comprises bready notes, fruit cake, sultanas, prunes, lick of booze.
Medium bodied, fine carbonation, semi drying close.
Decent for the style.

440ml can: BB 1st December 2023. Poured into my huge 'Judas' glass at home on 14th October 2023. Slight haze to the golden body, smooth white head. Yeasty nose and sweet tasting brew, all very Belgian Triple in nature, really enjoyed it.
