Description
Cidermaking is a playground of the pretty and the ugly, the bitter and the sweet: It’s never a one-note song when done well. Our apples reflect the striking, complex terroir of Washington’s apple country — from juicy dessert fruit to biting, spirited cider varieties. Simply put, apples contain contradictions. And it’s when we follow their every wild and quiet possibility, and seek out juxtapositions of flavor, that we find our most delicious end result.

Single from Press by Press. A few hours in the fridge. Mojito glass at home. Soda fizz pour. Clear, dull, pale gold. Grassy-apple-lychee-dry grape nose. Taste is catty at first. Big orange & sweet pineapple follows. Sweet onion, sharp apple, white wine, chamomile, slight pith on the tail. Solid acidity throughout. A touch too floral. Off-dry. Decent.

On tap at Bale Breaker - Seattle, pours a clear pale golden with a small white head. Aroma reveals light farmhouse notes and crisp apple skins. Flavour is crisp, with lots of fairly dry, crisp apple skins, a touch of farmhouse notes, and a hint of graininess. Crisp apple skin character on the finish. Not particularly complex, but nicely done.

Pounder from Press online. Born to Run: 23233 Clear, strawberry-peach sorta color, quick fizz. Sour plum, industrial apple nose. Taste is better: Very sharp & lingering apples, quite bitter, sour plum/grape skin, sort of floral, medium acid but really tart. Just a touch of added industrial sweetness & sulfite edge that I really don't like. Thin, medium carb, acidy, unnecessarily boosted abv. Good for the price point.

Revisited May 30, 2025:
Pounder via Press online, couple months in the fridge. Mojito glass at home.
Creamy, sour berry, cheap chardonnay nose.
Very tart, sour melon, white wine, ugly ethanol.
Thin, too sharp, irritating. Somewhat palatable but too unattractive to swig the whole can.

On tap at Bale Breaker, pours a clear blonde with a tiny head. Aroma brings out big bourbon notes than sort of come across perfumey, with light toffee and a touch of apple skins. Flavour is full of bourbon — with tons of vanillin — lots of toffee, crisp apple skins, and more vanilla on the finish. Not too sweet, but lots of bourbon and vanilla. Good stuff.

On tap at Bale Breaker, pours a clear pale golden with a tiny white head. Aroma brings out medium sweet apple skins, some wild yeast, and a touch of toffee. Flavour is medium sweet, with gentle apple skins, light wild yeast, and a touch of toffee-like residual sweetness. Competently brewed but nothing too exciting.

Draft pour at The Tap, Yakima. Rose red pour. Rocky fading head. Juicy apple and soft berry combo. Touch of floral, and a little tart. Bold apple and slight red wine and cranberry on the linger. Love the tart constant here. Flavorful and quite enjoyable.

Pint can from Press. Under-filled & it collapsed a little but I don't see a leak anywhere. The tab presses in with ease though. Bottoms up! Mojito glass @home. Clear, pale gold, unintentionally flat. Industrial perfume-y, honey, wax, sweet herbs, pith. Taste is dry, honey-floral, earthy-sweet. Initial bittersweet dessert pear is followed by lots of fun, sharp & rindy flavors that come off a little like my own custom bitters. Nicely astringent, something I usually don't get from a perry. Low to meddling tartness. Not sweet, but think white wine infused with herbs. Like the way Eden does their botanical apple aperitifs. This is just fine being acidic, thin & flat. Really well filtered, no D'Angou grit. Tongue is a bit numb like I'm allergic to something. Error or whatnot, this was good. I reserve the right to get sick later.

On tap at Bale Breaker - Ballard, pours a clear pale golden with a small white head. Aroma brings out wild yeast, light oak, and crisp apple skins in good cohesion. Flavour has a complex yeast presence, with wild yeast, crisp apple like, and just a hint of residual sweetness. Love the wild heart here. Low residual sugars and a nice buggy, oaky finish. Excellent.
