Description
It all began with a 27 year old brewer, a windowless apartment, and a mountain of credit card debt. Phillips’ first brews were about as unconventional as his financing structure. In the conservative beer climate of 2001 the brewery launched with an Espresso Stout, a Raspberry Wheat Ale, and a boldy-hopped IPA; a suitable foreshadow for the creativity to come.
Since then Phillips has moved out of the apartment and into a more brewing-appropriate facility (with windows) closer to town. We have launched a soda company, a distillery, and most recently a malting facility–the only one of its kind in Canada.

Poured from 473mL can (pkg 24 March 2026). Hazy dull blonde with white head. Overripe citrusy tropical hops with wheaty oat base. Average.

From a 568ml can on 11/4/2026. Pours a clearish golden with a biggish head. The nose features some zesty orange and lemon citrus. Tastes of pineapple, orange and lemon, with a firmish bitterness featuring grapefruit and a touch of pine. There’s some light booze in the finish. Though doesn’t really present as big as 9 per cent. Fullish body with average carbonation. No world beater but a more than Drinkable big IPA.

473ml can. Pours a cloudy milky yellow with a small, creamy, long lasting, white head that leaves sticky curtains of soapy lace. Sweet fruity aroma of bready wheat malt, grapefruit rind, mango, peach, strawberry, earthy yeast and herbal hops. Sweet fruity flavour of bready wheat malt, grapefruit, apricot, pineapple, mango, honeydew melon, earthy yeast, oats and spicy hops in a dry, bitter finish. Medium body with a thick, creamy, smooth texture and soft carbonation. Juicy and enjoyable.

On tap at Phillips. Pours a murky yellow with a white head. Faint tropical fruit on the nose. Flavour has citrus rinds, tired tropical fruit, and dry grass. Inoffensive, but really lacks oomph in any direction.

473ml can. Pours a slightly hazy orange red with a small, fizzy, short lived, pink head that leaves spotty lacing. Sweet fruity aroma of grainy wheat malt, cherry, raspberry and floral hops. Sweet fruity flavour of grainy wheat malt, cherry, raspberry, lime and floral hops in a dry, tart Lacto finish. Medium body with a sticky, syrupy texture and average carbonation. Pretty sweet, but what did ya expect? Fun stuff.

Tastes of tangy orange, leading to a moderate sharpish bitterness, which is a touch warming. Perhaps doesn't present quite as big as it is, but you know it's not a light. Fulllish body with average to lively carbonation. Not very sophisticated and a bit meh.

473ml can. Pours a hazy yellow with a small, frothy, short lived, white head that laces. Aroma of grainy wheat malt, coffee, lemon and floral hops. Sweet flavour of grainy wheat malt, grapefruit pith, passionfruit, coffee and piney hops in a dry, bitter finish. Medium body with an oily texture and average carbonation. Interesting. A hazy IPA with coffee is kind of weird, but I kind of like it.
