Description
It all began with a 27 year old brewer, a windowless apartment, and a mountain of credit card debt. Phillips’ first brews were about as unconventional as his financing structure. In the conservative beer climate of 2001 the brewery launched with an Espresso Stout, a Raspberry Wheat Ale, and a boldy-hopped IPA; a suitable foreshadow for the creativity to come.
Since then Phillips has moved out of the apartment and into a more brewing-appropriate facility (with windows) closer to town. We have launched a soda company, a distillery, and most recently a malting facility–the only one of its kind in Canada.

On tap at Phillips. Pours blonde with a slight haze and a white head. Light wheat and citrus zest on the nose. Flavour has light, soggy wheat; not really getting much citrus. A simple, but somewhat refreshing ale.

On tap at Ocean Island Inn. Pours clear gold with a white head. Stale pine on the nose. Flavour has stale pine, resins, and a sticky malt base. It's okay, but far from great.

Complimentary tap pour at my hostel. Pours clear blonde with a white head. Dead grass on the nose. Flavour has limp dead grass, soil, light carbonation. The poster child for a lifeless craft lager.

473ml can. Pours a slightly hazy orange red with a small, fizzy, short lived, pink head that leaves spotty lacing. Sweet fruity aroma of grainy wheat malt, cherry, raspberry and floral hops. Sweet fruity flavour of grainy wheat malt, cherry, raspberry, lime and floral hops in a dry, tart Lacto finish. Medium body with a sticky, syrupy texture and average carbonation. Pretty sweet, but what did ya expect? Fun stuff.

From a 568ml can on 13/2/2026. Pours a clearish golden with a small head. Has a modest nose with a hint of citrus. Tastes of tangy orange, leading to a moderate sharpish bitterness, which is a touch warming. Perhaps doesn't present quite as big as it is, but you know it's not a light. Fulllish body with average to lively carbonation. Not very sophisticated and a bit meh.

473ml can. Pours a hazy yellow with a small, frothy, short lived, white head that laces. Aroma of grainy wheat malt, coffee, lemon and floral hops. Sweet flavour of grainy wheat malt, grapefruit pith, passionfruit, coffee and piney hops in a dry, bitter finish. Medium body with an oily texture and average carbonation. Interesting. A hazy IPA with coffee is kind of weird, but I kind of like it.

Sweet flavour of toasted bready malt, toffee and spicy hops in a dry, mild bitter finish. Medium body with an oily texture and average to soft carbonation. Malt forward, easy to drink and enjoyable.
