Bottle (fridge), undated (late Summer), drunk 11/27/15.
Hazy pour despite being in the fridge for months. Orange-copper-golden with a light beige head that is well-retained.
Lilac and other perfume-like notes are fairly sharp in the nose. Really gettin my nose in there and swirling but I’m not getting a whole lot more than this perfumey/grassy character and a bile-character that isn’t terribly strong, but isn’t terribly compelling either. Maybe some butterrcream-like malt and some biscuits and brown bread. Nothing that distinguishes it as authentically Belgian. Maybe some plastic?
Flavor is saccharine-like up front, leading to grassy and floral notes before an incredibly astringent, sharp note emerges and leads to a bile-like finish with more cotton candy-like sweetness. Underfermented, incredibly unclean and what in the hell is this sharp, intense astringency on the end??

Pours an amber from a tap, very dark for a saison, quickly dissipating fluffy white head. Not much aroma, some yeast, sweet malt. Flavor is nicely complex, soil, spicy funk, doughy yeast, some pear. Not thin, not effervescent, doesn't overdo anything, again seems not to match a classic saison but very impressive. Hadn't known wht to expect, but looking forward to seeking out more from this brewer. Very good beer.
