Revel started in 2014 as a solo passion project. Imagine our excitement when it turned out that, hey, lots of folks are fermentation enthusiasts!

By 2022, our team was seven people strong — with over 1000 cases of Revel bottles and cans shipped to discerning drinkers every month.

Our characterful native yeast fermentations explore the endless flavours Ontario has to offer. Combining farm-grown and foraged fruits, discovering what the fermentation process yields, and aiming to bring out the best of each ingredient is what makes us excited to come to work every day. (Well, that, and all the incredible smells.)

(On tap @ Paradise Grapevine, Toronto, Sept 27/19) Pours clear straw gold with a small white head. Notes of bright zippy zesty apples with a little citrusy twang, light acidity, dusty sort of farmhouse yeast vibe, lightly leafy/herbal quality, bit earthy into the dry finish, fairly crisp with a hint of tannin and funk in the aftertase. Light bodied, average plus carbonation. Nice balance here, good blending and not a particularly overbearing funk; this is obviously a lot less complex than a number of the Revel products but as a base it's excellent as a dry cider.

(750ml 2018 dated bottle from the cidery webshop) Pours lightly hazed pale gold with a decent sized white head that fades without lace. Aroma of honeyed golden plums, baking apples, fresh meadow flowers (no dandelions to smell!), herbal salad greens, interesting savoury note, little lemony acidity for sweet-tart balance. Flavour quite tart and lightly sweet, golden plum and acidic apple, fruit skins, lemon and white wine zip, honeyed flowers, light almost peppery herbal quality, that sweet floral pollen vibe really does build into the finish. Light bodied but with a certain thickness on the finish, moderate zippy carb. This is a very delicate cider in some ways, given the nature of the flowers, but it's a really elegant one.

(750ml 2019 bottle from the cidery webshop) Pours beautiful orange-tinged medium pink with a soft haze and a big loose whitish head with a little lace. Aroma of bright semi-sweet pale red cherries, some sweetish strawberries, nice tart apples, some earthier red fruit notes from the grape skins, quite a persistent barnyard funk and some light herbs. Flavour is juicy and lightly to moderately tart, nice strawberry preserve flavour leading the way, supplemental cherries, apple is in the background, light wet hay funk, soft tannins but not terribly bitter, nice drying softly mineral finish with persistent berries. Light body with moderate zippy carbonation. Awesome picnic beverage, complex but highly refreshing with nice berries.

(355ml can from the cidery webshop) Pours pale salmon/peach colour with a subtle haze and short lived white head. Aroma of pink grapefruit, floral hibiscus-strawberry vibes, slight tannins, moderate funky brett blanket, spicy pears underneath. Flavour is light tart and light sweet, pretty dry overall, citrusy florals, soft strawberries, base of Brett-funked pears, a little white pepper, good soft tannic astringency, lingering pear in the aftertaste, light oxidized nutty feel too. Light bodied, oily, rather soft carbonation. Nice refreshing interesting perry, close in complexity to some of the bottled offerings but more convenient in the can.

(750ml blend 1 bottle from the cidery webshop) Pours lightly hazed intense pale pinkish orange with a small whitish head fading rapidly. Lavender is surprisingly dominant on nose and palate, especially late sip, overlaying a core of soft tart apples, rhubarb and floral strawberries with a perfumed, lightly bitter and heady quality. Plums are very soft and support the other adjuncts with a light tannic bite. Overall lightly sweet and lightly tart finishing quite dry with loads of lavender in the aftertaste. Light to medium bodied with soft effervescence. Summer in a bottle! Great al fresco aperitif.

(750ml 2018 bottle from the cidery webshop) Dolgo pomace bottling. Pours nearly clear pale straw with a small haze of white bubbles from a high pour. Aroma of lemon peel, bright pithy citrus, verbena, bright spring flowers, tart crab-type apple characters, lactic and very light acetic acid, soft tannin and spice. Flavour is bright but very soft tart lactic lemon with bits, acidic apple flesh and 'green' skin, some flowers, gentle yeast with a little Brett, hints of acetic notes, drying tart finish with a little yeasty dustiness but not on the level of some Spanish examples I have had. Lightish slick body with basically no carbonation. Feels fairly close in style to the Spanish versions as hoped, very nice summer beverage and an impressive bottling from Revel.

(750ml bottle from the cidery webshop) Pours clear dark rosé coloured with a small whitish head. Basically a plum party in a glass with bright aromas of tart, floral and complex plums sitting in a basket of soft, dry and very lightly tart apples, with touches of tannin and good mineral crisipness. Balance is lightly sweet and very lightly tart with a bone dry finish and lingering fruity plum notes. Light to medium body with good spritzy effervescence. One of the nicer plum-forward beverages I've had and an excellent digestif.
