Revel started in 2014 as a solo passion project. Imagine our excitement when it turned out that, hey, lots of folks are fermentation enthusiasts!

By 2022, our team was seven people strong — with over 1000 cases of Revel bottles and cans shipped to discerning drinkers every month.

Our characterful native yeast fermentations explore the endless flavours Ontario has to offer. Combining farm-grown and foraged fruits, discovering what the fermentation process yields, and aiming to bring out the best of each ingredient is what makes us excited to come to work every day. (Well, that, and all the incredible smells.)

(750ml bottle from the cidery webshop) Pours clear pale salmon blush with a few rapidly fading white bubbles. Aroma of rich pear, slightly tannic red baking apples, red berry candy, sprightly underripe pineapple acidity, subtle spice box, tequila and wood, richness from the grape skins, sweet-sour balance and a little booziness. Flavour has somewhat more persistent acidity, apple and pear in balance with pineapple accents, red jelly beans and sweet tarts, soft tannins, a lot of berry vibes, sweetness in the middle and some clear perry in the finish playing with the tequila barrels which lend some spirit twang. Medium bodied with softly sparkling effervescence. Easily the best cider I've had, if a bit atypical with all the other elements in it. As complex and intricate and well-balanced as you could ask for, pulling elements of natural wine and even cocktails in.

(750ml bottle from the cidery webshop) Pours lightly hazed bright straw gold with a small white head. Notes of bright, zippy lemon and herb laden tart apples with a real punch from the lemon verbena, matched with a deep and slightly spicy wooden quality with the tequila bringing lots of spirit notes without the heat, with some slightly sweaty Brett on the nose but light hay on the tongue. Light to moderate acidity overall with a crisp mineral finish. Fairly light body with soft effervescent carb. Really nice! The lemon verbena in this version feels more interesting than most lemon or lime zest additions do, and plays beautifully with the tequila barrel.

(750ml bottle from the Revel webshop) Pours nearly clear straw gold with an average sized but fading white head. Notes of cereals and dough with pronounced sourdough acid profile, deep tannic apple skin earthy undertones gives a clear skin contact base, some soft funk, balance is light to moderate acidity with dry tannic rich apple skin finish and some wood and dusty yeasty overtones to the aftertaste. Light to medium body with rather soft carbonation. Softer in some ways than a typical cider, with its pronounced sourdough and cereal half, but firmer as well thanks to stronger skin contact. Nose is a bit restrained.

(500ml 2018 bottle from the Revel webshop, this vintage is cider and not perry and contains donut peaches as well as nectarines) Pours basically clear pale straw gold with nearly no head but nice bright bubbles. Aroma of crisp and quite tart yellow apple, nectarine, rich peach, sweet heady vanilla bean, pinch of white wine vinegar, slight tropical fruit undertone, wet and slightly sulphurous funk. Flavour is fairly high tartness with a mix of yellow apple, sour nectarine and sweet-tart peach, floral, tropical pineapple/banana smoothie hints for some reason, subtle sweet vanilla, soft fruit skin tannin, light funk, lactic creaminess into the finish. Light to medium body, good effervescence. A surprising cider for me, the vanilla was both more prominent and more sympathetic than I expected, bringing out the tropical undertones from the pit fruit.

Bottle @ Thomas A share. Thanks Thomas. From Berlin. Pours hazy yellow with bubbles on top. Ripe Apples, mostly green, grapes,and vanilla slash Oak. Dry finish. Fresh! Cool!

A hazed yellow cider with a thin white head. In aroma, sweet fruity mix of tart apples, light acidity, light perfumy notes, plums, very nice. In mouth, a nice sweet fruity tart mix of apple jam, puckering acidity, light Brett, very nice and tart. On tap at Lupulus.

Bottle. Clear pale yellow color with white head. Aroma is beautiful white wine character together with fresh pears. Taste is the same, such a great blend! Mineraly mouthfeel with sparkly carbonation. Oh yeah, this is amazing!

Can, no idea which vintage. Rather clear pale yellowish color with no head. Aroma is green apples, quite funked, leather. Taste is funky green apples, custard, leather. Sparkly carbonation, dry finish, mineraly. Good!

Tap at Muted Horn. Unclear palest yellowish color with no head. Aroma is super funked up pear, tickles your nose. Taste is pear and apples, with quite a tart bite. Dry finish, mild sparkle. Wow, this is seriously funky!

(On tap @ Birreria Volo, Toronto, Dec 31/19) Pours pink-tinged medium purple in the candlelight with a small head. Notes of lovely lightly Bretted natural wine, depth in the base from both cider and pear, crushed tart blueberries, touch of jam, hints of aromatic fruity table grape too. Light sweet and light to moderate tartness, hints of lactic and acetic acid, mineral dry finish. Medium bodied, light carbonation. Revel is really upping their game lately and this is delightful, both multilayered and aggressively drinkable. UPDATE: Drinking a 2019 bottle @ home and this is even better than I remember at the bar on tap. Very complex but nice balance, quite wine-like. Interested to try the 2020 blend.
