Revel started in 2014 as a solo passion project. Imagine our excitement when it turned out that, hey, lots of folks are fermentation enthusiasts!

By 2022, our team was seven people strong — with over 1000 cases of Revel bottles and cans shipped to discerning drinkers every month.

Our characterful native yeast fermentations explore the endless flavours Ontario has to offer. Combining farm-grown and foraged fruits, discovering what the fermentation process yields, and aiming to bring out the best of each ingredient is what makes us excited to come to work every day. (Well, that, and all the incredible smells.)

(750ml 2018/batch 2 bottle from the cidrey webshop) Pours almost clear very pale straw colour with a small white ring of bubbles and no remaining purple cast. Aroma of perfumed lilac blossoms dominating over soft tart plum flesh and slightly tannic skins, a somewhat herbal component with the floral, apple notes definitely secondary with a light dusting of funk and a little lactic tartness. Flavour is moderately tart up front and actually rather sweet by mid-sip on, with bright plum acidity and a little apple hitting first and then richer plum flesh, tannin and lilac build in the middle, leaving a finish that's actually off-dry and reminiscent of a perry from a floral pear cultivar (good call from my better half!). Long aftertaste of plum flesh and skin, lilac, soft herbs and that lovely perry vibe. Light to medium bodied with fairly low but filling carbonation. Lovely stuff here, with a depth and complexity from the lilac that really stands out.

A clear light burgundy red cider with a very thin white head. In aroma, sweet fruity apple juice with light grapeskins, light mineral notes, pleasant. In mouth, a nice sweet tart mix of apples, light mineral notes, pleasant and smooth.

500mL bottle, pours a clear blonde with a quickly-dissipating white head. Nose is wonderfully complex, with a lot of white wine, barnyard funk, and apple / pear skins. Flavour follows, with a really great blend of dry apple and pear skins, moderate funk, and white wine. Fairly tannic and funky, with a lovely white wine character. Finishes slightly tart and acidic, with a wonderful funk. Excellent.

(355ml can from the cidery webshop) Pours lightly hazy bright red with a tiny pinkish ring of bubbles and no lace. Aroma of juicy, sweet-tart and lightly spicebox-inflected cherry, nice Montmorency character, some skin tannin depth, ample barnyard and sweaty funk, hay, slightly wine-like but with some apple showing through. Flavour is very kriek-like with nice softly tart and spicy Montmorency flesh, moderate apple and pit fruit base flavours, skin tannins, soft funky hay, light citrusy acidity without much acetic acid, wine-like, finishing pretty dry and lightly tart with good lingering cherries and hay. Light to medium bodied with soft filling effervescence. A really nice funky kriek-like cider with the cherries really driving the show.

A hazed pinkish cider with a very thin white head. In aroma, sweet fruity apple jam with plums and strawberry, light acidity, very nice. In mouth, a nice sweet fruity apple juice, plums, light Epsom salts, almost Chinese, very nice.

(On tap @ Birreria Volo, Toronto, Sept 26/19) Pours pale gold with a small white head. Notes of lightly tart yellow plums and subtle pale apples with moderate elderflower and fresh herbs, light fruit skin tannin bittereness, drying and fairly mineral into the finish with a decent amount of finishing elderflower herbal brightness. Light bodied with average carbonation. As an elderflower lover this was a little more subtle than I'd hoped but well-balanced and very pleasant to drink.

(On tap @ Paradise Grapevine, Toronto, Sept 27/19) Pours clear straw gold with a small white head. Notes of bright zippy zesty apples with a little citrusy twang, light acidity, dusty sort of farmhouse yeast vibe, lightly leafy/herbal quality, bit earthy into the dry finish, fairly crisp with a hint of tannin and funk in the aftertase. Light bodied, average plus carbonation. Nice balance here, good blending and not a particularly overbearing funk; this is obviously a lot less complex than a number of the Revel products but as a base it's excellent as a dry cider.

(750ml 2018 dated bottle from the cidery webshop) Pours lightly hazed pale gold with a decent sized white head that fades without lace. Aroma of honeyed golden plums, baking apples, fresh meadow flowers (no dandelions to smell!), herbal salad greens, interesting savoury note, little lemony acidity for sweet-tart balance. Flavour quite tart and lightly sweet, golden plum and acidic apple, fruit skins, lemon and white wine zip, honeyed flowers, light almost peppery herbal quality, that sweet floral pollen vibe really does build into the finish. Light bodied but with a certain thickness on the finish, moderate zippy carb. This is a very delicate cider in some ways, given the nature of the flowers, but it's a really elegant one.

(750ml 2019 bottle from the cidery webshop) Pours beautiful orange-tinged medium pink with a soft haze and a big loose whitish head with a little lace. Aroma of bright semi-sweet pale red cherries, some sweetish strawberries, nice tart apples, some earthier red fruit notes from the grape skins, quite a persistent barnyard funk and some light herbs. Flavour is juicy and lightly to moderately tart, nice strawberry preserve flavour leading the way, supplemental cherries, apple is in the background, light wet hay funk, soft tannins but not terribly bitter, nice drying softly mineral finish with persistent berries. Light body with moderate zippy carbonation. Awesome picnic beverage, complex but highly refreshing with nice berries.
