Revel started in 2014 as a solo passion project. Imagine our excitement when it turned out that, hey, lots of folks are fermentation enthusiasts!

By 2022, our team was seven people strong — with over 1000 cases of Revel bottles and cans shipped to discerning drinkers every month.

Our characterful native yeast fermentations explore the endless flavours Ontario has to offer. Combining farm-grown and foraged fruits, discovering what the fermentation process yields, and aiming to bring out the best of each ingredient is what makes us excited to come to work every day. (Well, that, and all the incredible smells.)

A blonde bubbly cider with a very thin white head. In aroma, sweet mix of apples, light honey, light mineral notes, nice and smooth. In mouth, a nice tart mix of apples, light Brett, honey and ginger, very nice. On tap at Lupulus.

07-07-19 // taster at Muted Horn Minimal unclear very pale yellow. No head. Funky pear nose. Tannic. And lovely pear and appleish notes. Great.

Can shared in train, thanks to Maakun! Sour apples, bit of that powdery dry baking yeast vibe, nutty, tannin dry. Quite strong wild, near gluey sour, moderate bitter. Can from Bierkoning, shared on the train home. Can looks nice? Tart apple, soft funk, dry apple peel, earthy dry apple, soft berries and leaves. Under medium tart and bitter, light sweet. Almost medium bodied, over medium dry. Nice.

Bottle at Carnival in Amsterdam. The pour is peach pulp with a rose laving. Nose: petals, strawberries, perry/cider overall with a firm wine aroma. Mouth: frizzy, strawberries candy, sparkling and peppery finish.

Bottle at Carnival in Amsterdam. Apricot skin a bit irregular color, white persistent lacing. Nose: very vinous with a firm apple cider overall. Mouth: easy start, clean overall cider, fruity with a supper tannin-tart finish. Peculiar.

Bottle at the Carnival in Amsterdam. Cloudy sprite color with no foam. Nose is crazy, apple, green apple skin. Mouth: frizzy, a bit and surprisingly sweet note of apple pulp, peppery finish.

Bottle at the Carnival in Amsterdam. Pale water-liked golden color, some bubbles initially. Nose: elderflowers, thyme, orange peel, fruity. Mouth is frizzy, dry, a bit tart but easy.
