Revel started in 2014 as a solo passion project. Imagine our excitement when it turned out that, hey, lots of folks are fermentation enthusiasts!

By 2022, our team was seven people strong — with over 1000 cases of Revel bottles and cans shipped to discerning drinkers every month.

Our characterful native yeast fermentations explore the endless flavours Ontario has to offer. Combining farm-grown and foraged fruits, discovering what the fermentation process yields, and aiming to bring out the best of each ingredient is what makes us excited to come to work every day. (Well, that, and all the incredible smells.)

A lightly hazed golden cider with aroma of sweet apple jam, light Brett pleasant. In mouth, a nice tart mix of tart apples, light Brett, light lactic notes, pleasant.

Panda thanks to SaltyGrog: Poured a reddish and beige head. Aroma is floral, apple, berry, grape. Taste is cereal, berry, apple, tangy.

Clear, bottom round, 750ml bottle from press online.

Pint glass. Soda spritz pour. Pale hazy.
Sour, grape-y, white wine, bubblegum, vinegar, roses, wild ferment nose.
Twangy, spirited, leafy, high acid, white grape, lemon, medium-low farm funk, yeast, still a bit industrial.
Fizzy, halfway acid, approachable alcohol, super thin.

Indifferentiable from many wild ferments. It's fine but unjustified to prop up in fancy glass. Super average.

On tap at Stillwell. Pours clear blonde with a white head. Musty apples and lots of funk on the nose; fairly earthy. Flavour has tart and musty apples, good funkiness. Great funk. This is an excellent cider.

On tap at Stillwell Freehouse. Pours pinkish blonde with a slight haze and a white head. Dry pear skins and floral notes on the nose. Flavour has a moderate level of tartness, acidity on the finish, pear skins, slightly juicy and fairly dry. Gentle level of funkiness throughout. Nice perry, fairly interesting profile.

On tap at Beertown- Toronto, pours a clear copper amber with a small white head. Aroma has an invigorating mix of tart plums, apple skins, and grape skins. Flavour is much the same, with acidic plums, some grape skins, and gentle apple skins. Quite acidic/tart but great depth and complexity. Very good.

On tap at Burdock, pours a hazy blonde with a small white head. Aroma has notes of horse blanket, musty apple skins, and hay. Flavour is modestly tart, with horse blanket, apple skins, hay, and a touch of citrus. A bit too sweet for a Spanish sidra but well-made.

(Draft at Muted Horn, Berlin, 19 July 2025) Amber colour with no head. Fruity nose with red apples, apple skin, cherries and plums. Fruity tart taste with notes of red apples, plums, sour cherries, oak wood, red wine and a generous acidity in the finish. A light tannic bitterness. Medium body, dry. Interesting, with lots of different fruits and a solid acidity. Very nice.
