Revel started in 2014 as a solo passion project. Imagine our excitement when it turned out that, hey, lots of folks are fermentation enthusiasts!

By 2022, our team was seven people strong — with over 1000 cases of Revel bottles and cans shipped to discerning drinkers every month.

Our characterful native yeast fermentations explore the endless flavours Ontario has to offer. Combining farm-grown and foraged fruits, discovering what the fermentation process yields, and aiming to bring out the best of each ingredient is what makes us excited to come to work every day. (Well, that, and all the incredible smells.)

A hint of cinnamon here, and some bretta. Some peel and crabapple sense. Pours like white wine. Some tangy bitterness here. Cask Days.

A hazed golden blond cider with aroma of nail polish, fusel alcohol, phenolics, OK. In mouth, light sweet fruity malt with light fusel alcohol, light phenolics, a bit off. Cask Days 2015.

A lightly hazed golden cider with aroma of Brett, light lactic notes, tart apples, very nice. In mouth, tart apples with light acidity, light Brett, lactic acid, very nice. On tap at Beau’s Oktoberfest 2015.

Draft - Nice light funky Apple, not to sweet and some tannin. Very pale yellow. Dry Apple, touch of peel and a dry finish.

Draft - Grassy, citrus and funky Apple. Clear pale gold. Perfume, grass and lots of funky Apple notes. Hops give it a very nice funky yeasty quality. Very nice.
