Revel started in 2014 as a solo passion project. Imagine our excitement when it turned out that, hey, lots of folks are fermentation enthusiasts!

By 2022, our team was seven people strong — with over 1000 cases of Revel bottles and cans shipped to discerning drinkers every month.

Our characterful native yeast fermentations explore the endless flavours Ontario has to offer. Combining farm-grown and foraged fruits, discovering what the fermentation process yields, and aiming to bring out the best of each ingredient is what makes us excited to come to work every day. (Well, that, and all the incredible smells.)

A rosey pinkish cider with aroma of tart raspberry jam with light Brett, light funk, very nice and complex. In mouth, a nice tart apple with light acidity, light Brett, light cork character, light mineral notes, very nice and complex. On tap at Bar Lupulus.

A hazed blonde perry with good bubbling. In aroma, sweet fruity pear with light lavender and faint sulfur, pleasant and smooth. In mouth, a nice sweet fruity mix of tart pears, light lavender, pleasant acidity, nice and surprising. On tap at Brother's Beer Bistro.

RERATE: (750ml 2019 bottle from the cidery webshop) Clear straw gold pour with a small white head that fades. Notes are quite similar in general character to my previous rate, but with additions of some nice earthy herbal stuff, soft curry spices (cumin seed? turmeric?) and vermiculite in the nose and some soft white tea, lemon pith and grass in the flavour with a reprise of that curry-esque subtle vibe. Much more interesting than my previous rate, though the lightness still stands and I might prefer a bit more intensity throughout. (7-3-7-4-16) (On tap @ Birreria Volo, Toronto, Apr 20/18) Pours clear medium gold with almost no head. Notes of crisp lightly sweet apples, natural white wine, grape skins, light funk, tannic hints, maybe a little touch of some spicebox, light and a little watery, barely off-dry and finishing dry with lingering grape skin tannins. Light mouthfeel, slightly spritzy carbonation. Lacking some heft for me, the wine-like nature is nice but everything is a little too mild and not forceful enough in character and I didn't find the apple quality very deep. (7-3-6-3-16)

A pale blonde cider with aroma of orange zest, spruce tips, grapeskins, very nice and complex. In mouth, a nice tart apples with light grape skin, light pine needles, juniper, alcohol warmth, very nice. On tap at Bar Lupulus.

(On tap @ Birreria Volo, Toronto, Jan 19/18) Pours nearly clear pale gold with a small white head. Nose is hyper floral, punchy perfumed notes, lots of elderflower, light jasmine, subtle soft black tea, light apple. Flavour is more gentle, delicate notes of elderflower and apple saft, jasmine tea, slightly soapy florals, dry, no funk or anything of the sort. Light to medium bodied, sparkling carbonation. Very very floral, living in Sweden I've come to appreciate elderflower a lot but it might not be everyone's thing. In that context it worked really well for me.

(On tap @ Bar Hop, Jan 15/18) Lightly hazy light gold with a bare white ring. Aroma is bright white wine, high notes of grape, gooseberry, grass, funky hay, floral, tart apple of course, a bit of cider vinegar. Flavour is soft notes of green apple, white wine, soft grape skin, gooseberry, elderflower, wet grass, funky mulch. Soft acidity, dry finish, some funk in the finish. Lightish body, sparkling carb. Spontaneous vibe is there, as is the wine, but I was hoping for more prominent elderflower and a little more concentration. Solid.
