Our characterful native yeast fermentations explore the endless flavours Ontario has to offer. Combining farm-grown and foraged fruits, discovering what the fermentation process yields, and aiming to bring out the best of each ingredient is what makes us excited to come to work every day. (On tap at Lansdowne Brewery, Jan 13 2016) Pours clear pale gold with a tiny ring of white bubbles. Aroma of semisweet apple, lots of herbal notes, juniper, tart berries. Taste of very lightly sweet apple with nice acidity and skin, herbs and cut grasses, a little spirit character. The gin character does build a lot as it warms. Finish is pretty dry with a little sweetness and a little tartness, juniper and herbs build in the finish, a little bit of spicebox as well. Fairly light body with average carb. I came into this expecting gin, which I like, and it was there. Could be overbearing for some but I liked it - dry and interesting. EDIT: Rerating a 355ml can from 2020, now all Ontario botanicals and wild fermented. Revel has come a long way philosophically in 5 years. Quite sweet apple and candied lemon nose with fragrant lavender and juniper, soft peppery tulsi notes in the background, more of a fresh and floral gin vibe with ample funk. Flavour is quite dry compared to the nose, dusty lightly tart lemony apples with soft juniper, perfumed lavender and soft herbal bite, dry finish and a little dusty funk and cedar wood in the aftertaste. Light bodied and almost flat. Quite solid.

(On tap @ Bar Hop, Jan 11 2016) Pours really hazy straw coloured with basically no head. Super tart and sourish notes of light apple vinegar, green apple flesh, quite funky Brett, yeast. Flavour is sweet and lightly tart apple and white wine grapes with some citrus character and some fresh apricot notes. Finish is fairly dry and tart with soft funk and apple skin. Light to medium body with above average carb. Did not know there was pear in this and did not detect it. Pretty nice, still fruity and funky, good stuff.

Draft - Grassy, citrus and funky Apple. Clear pale gold. Perfume, grass and lots of funky Apple notes. Hops give it a very nice funky yeasty quality. Very nice.
