Tap at bar hop 2. Clear yellow pour, no head. Aroma is very much like gin. Big juniper note, with subtle honey soaked lemon zest, and some sweet freshly cut apple skins. Mouth feel, and carb are what youd expect. The finish is sweet, and savoury. Solid herbal notes, more juniper, some pine and even a hint of elderberry. The apple seems to take a back seat, buts its always there adding a nice sweetness to cut the copious, and strong herbs. Interesting stuff.

500 ml bottle. Pours a dull dark hay color with no head. Aromas of cloves, bright lemon, and dull apple. Odd apple pie and clove flavor with earthy floral notes and a bit of tequila (gin botanicals - I don’t know...)

Bottle - Intense botanicals, almost tequila barrel notes as well. Cloudy dirty yellow with a small white head. Soured botanicals ands apple peel. Nice.

500mL bottle, pours a hazy yellowish blonde with a small white head. Aroma is very fragrant, with lots of clove, vanilla and gin botanicals, with a touch of citrus rind. Flavour is along the same lines, with vanilla and clove upront, accentuated by gin botanicals and citrus rind. Lots of clove on the finish. I normally wouldn't like this, but this works pretty well.

Hazy and pale. No head. Massive gin botanicals, vanilla, light apple. I mean it smells like aromatherapy, but if you forget about that it smells nice. Ok body, light apple, and lots of spice, botanicals. Definitely needs some residual sugar to balance out the spices, though.

A hazed golden cider with aroma of juniper berries, light mineral notes, spruce tips, very nice. In mouth, a nice sweet fruity apple juice with light juniper notes, light pine needles, apple skins, pleasant and refreshing. On tap at Brother’s Beer Bistro.

(On tap at Lansdowne Brewery, Jan 13 2016) Pours clear pale gold with a tiny ring of white bubbles. Aroma of semisweet apple, lots of herbal notes, juniper, tart berries. Taste of very lightly sweet apple with nice acidity and skin, herbs and cut grasses, a little spirit character. The gin character does build a lot as it warms. Finish is pretty dry with a little sweetness and a little tartness, juniper and herbs build in the finish, a little bit of spicebox as well. Fairly light body with average carb. I came into this expecting gin, which I like, and it was there. Could be overbearing for some but I liked it - dry and interesting. EDIT: Rerating a 355ml can from 2020, now all Ontario botanicals and wild fermented. Revel has come a long way philosophically in 5 years. Quite sweet apple and candied lemon nose with fragrant lavender and juniper, soft peppery tulsi notes in the background, more of a fresh and floral gin vibe with ample funk. Flavour is quite dry compared to the nose, dusty lightly tart lemony apples with soft juniper, perfumed lavender and soft herbal bite, dry finish and a little dusty funk and cedar wood in the aftertaste. Light bodied and almost flat. Quite solid.
