Revel started in 2014 as a solo passion project. Imagine our excitement when it turned out that, hey, lots of folks are fermentation enthusiasts!

By 2022, our team was seven people strong — with over 1000 cases of Revel bottles and cans shipped to discerning drinkers every month.

Our characterful native yeast fermentations explore the endless flavours Ontario has to offer. Combining farm-grown and foraged fruits, discovering what the fermentation process yields, and aiming to bring out the best of each ingredient is what makes us excited to come to work every day. (Well, that, and all the incredible smells.)

Poured from 750mL bottle (2019 vintage). Lightly hazed blonde gold with no head. Apple skin, semi-dry sweetness, decent.

Vom Fass im Muted Horn Berlin 2024-11 (with Pears & Dolgo Crabapple / 6.1% ABV) getrunken. Diese klare messingfarbene Cider mit leichter Kohlsäure zeigt ein sehr ausgewogene Balance der Fruchtaromen, leichter Säure, kaum Bitterkeit und feiner Süsse. Ein sehr gelungendes Cider!

12oz can via Press online. Another clear Solo cup on the porch, post hurricane while we wait for clean running water. Only slight farts when opening this can. Last one was queasy. Clear, magenta pour, extra frothy. Scent is mild sweet apple juice, light vinegar & dish soap, masked by a floral & candied Jolly Rancher cherry scent. Taste is soapy strawberry & cherry Starburst, oily texture, slight chem burn, lingering floral, with only a hint of the lightweight tart cider base. If it's the same funky base, it comes off softer, mild, mushy, integrated well masked. A low-key mineral quality & saline residual left after the follow through. Thin with some light texture, soft to mid carbonation, middle high acid, lingering cherry astringency & pear-like sweetness prevails. Kinda good.

12oz can via Press online. fruits, flowers, feelings stamped on the bottom of the cab in leui of an actual born on date... Clear Solo cup at home. Without clean water for a long spell. Farty sulfur when I crack the can open. Clear, crispy, pale gold, quick fizzle. Vinegar, floral sour cider, peppermint & root beer nose once the farts die off. Bold & tart citrus punch overlays light Sidra funk. Smoke, rubber & saline-laced wild cider. Black pepper, birch & light herbal bitterness. The strong & juicy citrus masks the ugliness if anything... it melds into the vinegar. Plenty acidic. Slight booziness going down. Thin, soda carb & semi-sweet. Tis okay if you can ignore all the ugly stuff. Wild doesn't not always mean tasty. Find the right fauna.

Clear 750ml via Press online in their quarterly, rose is this theme. Pint glass at home. Clear, dark ruby, quick pink soda head. Floral & sharp berry nose, soft incense, very very jammy. Taste is bitter sharp apple, mid earthy, with slightly astringent berry skin edges. Tart currants with deep red wine grape essence. Jammy upfront with a dry leaning astringent mouth on the finish. Smooth when cold. Acidy as it starts to warm up. Thin, lean, appropriate abv, just a gentle sparkly. Lovely.

First American rate. Can via Press online. Solo cup at home post hurricane. We still don't have potable water. Mostly clear, pale gold, quick fizz. Initial foul, farty sulfur nose. Field funk, yeasty, apricot, bittersharp apple, saline, light floral nose. Semi-sweet, bittersweets with lots of sharp contrast. Yeasty, lemon, hairy, dense sulfites, a little greasy, low carb, middling abv, slight vinegar finish on the tail. Odd vanilla from nowhere. Speaks to keeping it natural but unseasoned production. Aside from the nose it's okay.

355 ml can. Pours a pale hay color. Aromas of dry apples and champagne. Flavors follow same; fresh apples and a bit of champagne. Crisp and very dry. Not getting the funkiness or sediment that other more. Seems very processed.

Pale purple. Appley aroma, with soft fruit to lend balance. This one has some decent complexity to it.

Hazy and pinkish. Apple sauce sort of aroma, which isn't usually my thing. Good fruit to balance the apples on the palate.
