Origin beer, connected to nearby farms, artisans and the land surrounding the brewery. 100% made by us on our own equipment with our creative brains and hearts. Children welcome in our tasting room.

The Ale Apothecary is a very small artisanal brewery, located 10 miles west of Bend, Oregon in the middle of the Deschutes National Forest. Paul & Staci Arney built the brewery on their property in 2011 after Paul had decided that his career in industrial beer-brewing was officially over. Taking cues from historical breweries, Paul decided that he would take the very basic concepts of making beer and build a totally unique brewery out of them, relying on locally grown or foraged ingredients and using the most natural approach possible.

Before there were beer styles, there were just breweries making the best beer they could out of the raw materials nearby, the water from the ground, and the yeast in the air. Paul believes that the Process in making beer can be used as a primary ingredient, so The Ale Apothecary has its very own methodology that gives us our house character that cannot be reproduced anywhere.

We get our grain from Mecca Grade Estate Malt in Madras, Oregon. Our hops primarily come from Goschie Farms in Silverton. We naturally carbonate our beer in the bottle with Oregon wildflower honey and try to avoid any and all industrial processing aids or commodity ingredients. Instead of using exotic ingredients, we experiment with the process of making beer to find unique and inimitable flavors and experiences.

Bottle thanks to Sherrice. Pours a hazy yellow gold with medium creamy white head that lasts. The aroma is strawberry seed, funk, oak. Thin mouth, brett, funk, lemon zest, light strawberry, light tartness, very nice.

Bottle at Saraveza Farmhouse Festival, pours a cloudy bright orange with a small white head. Aroma brings out stone fruits, dark fruits, oak and medium tartness. Flavour is very complex, with lots of fresh fruity stone fruits, medium tartness, moderate oak and some tannins. Wonderfully balanced, with excellent fruity and barrel characters complementing. Excellent.

Bottle at Saraveza Farmhouse Festival, pours a cloudy golden with a small white head. Aroma brings out loads of honey, tart stone fruits and oak barrels. Flavour is along the same lines, with lots of oak barrels, some honey, and tart stone fruits. Dry, tart and fruity, with wonderful complexity. Excellent.

Bottle at Saraveza Farmhouse Festival, pours a still dark mahogany with a small beige head. Aroma brings out lots of sweet perfumey notes, sherry liqueur and dark fruits. Flavour is unusual, with notes of rye whiskey and sherry liqueur. Has a lot of nail polish in there too, but it's not too detracting. Not carbonated (duh), but it works well.

Bottle at Saraveza Farmhouse Festival, pours a cloudy vibrant orange with a small white head. Aroma brings out earthy hops and light oakiness. Flavour follows accordingly, with lots of earthy hops and some weird wild funky notes. What a strange beer. Works okay, but seems a bit off. Meh.

Bottle at Saraveza Farmhouse Festival, pours a dirty purple-ish blue with a small beige head. Aroma brings out notes of tart blueberries, white wine and light funk. Flavour is fairly complex, with tart blueberries, some funk, and earthy yeast. Got the bottom of the bottle, so it's quite yeasty. Good, but not my favourite from those guys.

Bottle at Saraveza Farmhouse Festival, pours a vibrant golden with a small white head. Aroma brings out lots of toasted cereal, tart oaky notes and lots of fir. Flavour is dominated by the fir, with tons of pine needles and tart oaky notes. Complex and well-integrated, but not a huge fan of the fir. Good stuff.

Flavour is along the same lines, with oak barrels, stone fruits, medium tartness and some fresh hopping. Wonderfully integrated - the fresh hopping is done very well. Excellent.

Bottle at Saraveza Farmhouse Festival, pours a cloudy golden with a small white head. Aroma brings out notes of chardonnnay, with fresh strawberries, medium tartness and white wine. Flavour is dominated by the fresh strawberries upfront, followed by light tartness, oak and white wine. Complex as hell, everything is integrated wonderfully.
