The Ale Apothecary is a very small artisanal brewery, located 10 miles west of Bend, Oregon in the middle of the Deschutes National Forest. Paul & Staci Arney built the brewery on their property in 2011 after Paul had decided that his career in industrial beer-brewing was officially over. Taking cues from historical breweries, Paul decided that he would take the very basic concepts of making beer and build a totally unique brewery out of them, relying on locally grown or foraged ingredients and using the most natural approach possible.
Before there were beer styles, there were just breweries making the best beer they could out of the raw materials nearby, the water from the ground, and the yeast in the air. Paul believes that the Process in making beer can be used as a primary ingredient, so The Ale Apothecary has its very own methodology that gives us our house character that cannot be reproduced anywhere.
We get our grain from Mecca Grade Estate Malt in Madras, Oregon. Our hops primarily come from Goschie Farms in Silverton. We naturally carbonate our beer in the bottle with Oregon wildflower honey and try to avoid any and all industrial processing aids or commodity ingredients. Instead of using exotic ingredients, we experiment with the process of making beer to find unique and inimitable flavors and experiences.

Bottle - Funky, acidic and bready. Gloudy yellow with a decent white head. Quick acidity and a creamy funky finish. Interesting and not really worth the crazy price.

750ml bottle pours out a straw color topped with a white head. Nose is very complex tea herbal notes spice tart funk and oak. Taste is more of the very complex herbs spice tea wood and tartness.

Bouteille 750ml, bottle share. Couleur jaune-orangée translucide, mousse blanche. Arôme de malt, prunes, levure, un peu sucré, alcool. Goût de malt acidité moyenne, un peu fruité. Carbonatation moyenne, corps moyen-faible.

750ml bottle thanks to rich. Pours out a hazy burnt orange topped with a small fizzy head. Nose is lots of barrel some lemon zest citrus notes and a light funky tartness. Taste is more of the barrels citrus zing and many more layers going on.

A hazed golden ale with a thin white head. In aroma, sweet fruity malt with light Brett, herbs, Italian spices, light catty notes, nice and complex. In mouth, a nice sweet fruity malt with loads of citrusy resinous pulp, spruce needles, juniper, smooth acidity, complex and beautiful. Bottle at Big Matt’s Eclipse tasting.

A bottle on the Ale Apothecary beers tasting at Firefly on Cambie. Tasted with Brian. Bottled 07-Apr-2016. Pours a clear copper with a tan head. Aroma is slightly sweet, funky, fermented fruits, nail polish notes, plums. Taste is the same character. Good stuff.

A 2015 bottle on the Ale Apothecary beers tasting at Firefly on Cambie. Bottled 06-Jun-2015. Tasted with Brian. Pours a clear pale golden with a white head. Aroma is funky, earthy, kind of exhausted gas (which disappers after several minutes), lemony. Taste is sour, earthy, lemony, fermented veggies notes (sauerkraut). Refreshing, good stuff.

Aroma is funky, floral, herbal, earthy, some sweetness. Taste is sour and sweet, fruity, herbal. Complex and well-balanced beer. Refreshing and easy drinlable (9.3%?!). Amazing beer.

750 ml bottle @ Bakgården Både &, Kristiansand. Unclear golden body with a small white head. Very pleasant and complex in aroma, fruity, mild acidic fruit, mild Brett, hint of wood, lemon and slightly vinous. Flavor is also complex and pleasant like aroma, fruity, acidic, vinous, wood, funk and bitterness – all extremely well balanced. Lots of flavors but nothing really dominates the others. Fine balanced body and long lasting aftertaste. Expensive, but great.

Bottle at Culmination Fest 16: Poured a orange with a off white head. Aroma is mix of jams and some vanilla in the nose. Taste is a weird blend of tartness and jams, light undertones of wood.
