Description
In his poem "Chicago," Carl Sandburg first refers to this great city as "Hog Butcher For the World." And while the literal meaning behind that moniker has faded since the mid-twentieth century closing of the Union Stock Yards, it anchors and inspires our ethos in three meaningful ways:

For starters, we love hops. The variety of ways they can be used in brewing and the range of flavors and aromas that they bring to beer are vast and areas in which we enjoy experimenting heavily. No surprise then that the word "hop" appears in our name and that the majority of our recipes begin with a specific variety or intuitive blend of hops in mind.

How we are inspired by the "Butcher" portion of our namesake is thankfully less bloody than the history behind it, but there are a lot of butcher-esque traits that we do draw inspiration from. All of the ones we grew up around were approachable, dependable and visibly and vocally passionate about their craft. They'd take the time to get to know you, get technical when necessary and if you wanted it, help you find something or make a recommendation. That's who we aim to be, except with hops, yeast, water and grain in a brewery instead of a butcher shop and a meat-filled counter.

Finally, at some point, you'll refer to us simply as "Hop Butcher" (and we're cool with that), but the "For The World" part is an important and meaningful element of our name. It inspires the ingredients we use and the personality behind the beers we brew: unique enough for the beer geeks, approachable enough for the newcomers. It guides who we work with and where our cans and kegs are distributed...and where they might someday be distributed.

Got as a gift from TheFugitive. 16 ounce can into tulip glass, canned on 6/4/2019. Pours very hazy medium golden amber color with a 1-2 finger dense and rocky off white head with fantastic retention, that reduces to a nice cap that lasts. Thick foamy lacing clings on the glass, with a fair amount of streaming carbonation. Fantastic appearance. Aromas of big mandarin orange juice, red grapefruit, lemon, lime, peach, pear, pineapple, apricot, passion fruit, mango, honeydew melon, red apple, citrus peel/rind, wood, peppercorn, pine, wheat, cracker, white bread dough, lightly toasted biscuit, and herbal/floral/grassy earthiness. Damn nice aromas with great balance and complexity of citrus/fruity/tropical/fairly earthy hops and bready malt notes; with big strength. Taste of huge mandarin orange juice, red grapefruit, lemon, lime, peach, pear, pineapple, apricot, passion fruit, mango, honeydew melon, red apple, citrus peel/rind, wood, peppercorn, pine, wheat, cracker, white bread dough, lightly toasted biscuit, and herbal/floral/grassy earthiness. Light pine, citrus peel/rind, herbal, floral, woody, grassy, peppery bitterness on the finish. Lingering notes of mandarin orange juice, red grapefruit, lemon, lime, peach, pear, pineapple, apricot, passion fruit, mango, honeydew melon, red apple, citrus peel/rind, wood, peppercorn, pine, wheat, cracker, white bread dough, lightly toasted biscuit, and herbal/floral/grassy earthiness on the finish for a good bit. Fantastic complexity, robustness, and balance of citrus/fruity/tropical/fairly earthy hops and bready malt flavors; with a great malt/bitterness balance, and no cloying/astringent flavors after the finish. A bit crisp finishing. Lightly increasing dryness from lingering bitterness. Medium carbonation and body; with a very smooth, moderately creamy/bready/grainy/sticky, and fairly resinous/rindy balanced mouthfeel that is great. Zero warming alcohol as expected of 5.75%. Overall this is a fantastic NEAPA. All around fantastic complexity, robustness, and balance of citrus/fruity/tropical/fairly earthy hops and bready malt flavors; very smooth and pretty refreshing to drink with the mellowly bitter/drying finish; nicely soft and not aggressive. Fantastic Cascade, Comet, XP06300 profile. Extremely juicy, vibrant, and fairly dank/earthy hop complexity; with a great balanced wheat/oat/malt backbone. Light residual sweetness with lingering resin dryness. A highly enjoyable offering, and spot on style example as expected.

Amazing complexity, robustness, and balance of citrus/fruity/tropical/fairly earthy hops and bready malt flavors; with a great malt/bitterness balance, and no cloying/astringent flavors after the finish. Lightly increasing dryness from lingering bitterness. Medium carbonation and medium-full body; with a very smooth, creamy/silky/bready/grainy, fairly sticky, and lightly resinous/rindy mouthfeel that is great, Minimal warming alcohol for 7.5%. Overall this is an amazing NEIPA. All around incredible complexity, robustness, and balance of citrus/fruity/tropical/fairly earthy hops and bready malt flavors; very smooth and easy to drink with the mellowly bitter/drying finish; great soft feel. Amazing Ekuanot, Citra, El Dorado profile. Extremely juicy and fairly dank/earthy hops; with a perfectly balanced wheat/oat/malt backbone. Light residual sweetness with lingering resin dryness. A highly enjoyable offering, and amazingly spot on style example.

Can shared at Lucky Bamboo share. Pours a hazy gold with a full finger of white foam that lingers. Lovely dank aromas with leafy green hops, citrus, pineapple and papaya notes. More pith and light peppery bitterness on the palate...lemon zest with a bit of grapefruit. Creamy palate with lingering pine bitterness. Liking the balance in this one.

Can shared at Lucky Bamboo share. Pours a glowing, hazy straw yellow with a finger of white foam that dissipates. Lemon, citrus and white grapefruit aromas with some pine, pineapple and mango as it warms. Smooth and juicy mouthfeel, spritzy carbonation underneath. Good citrus zest bitterness and some leafy green and piney bitterness towards the finish. Lingering dried mango and pineapple with more pine and zest.

Can shared at Lucky Bamboo share. Pours a hazy orange with a finger of white foam that lingers. Orange creamsicle nose with lactose, orange zest, lemon and mikan notes as it warms. More of the same on the palate...some vanilla and more orange sherbet notes. Smooth and creamy on the palate with lingering orange, cream, pine and prickly pear bitterness.

Can shared at Lucky Bamboo share. Pours a hazy glowing orange gold with a finger of white foam that lingers for a long while. Peach and apricot forward nose with persimmon, pineapple and dank as it warms. Creamy and juicy on the palate. Lots of pithy bitterness on the palate with dried tropical fruit underneath.

Keg at Champps Americana Brookfield, 5/9/19. Hazy orange, large frothy white head, good retention. Aroma of orange juice and pale malt. Taste is orange and lime, pale malt. Medium bodied, juicy, low bitterness.

Sampled at THT April. Very hazy yellow golden with white head. Sweet fruit juice, guava, pineapple, sugary malts, light spices and pine, lemon drops, honey. Quite sweet and light bitter. Solid medium bodied.

Can shared at THT April ‘19. Fairly hazy golden with a white head. Aroma of green weedy hops, dank notes, perfume and floral hops. Flavour is above moderate sweet and bitter. Medium bodied with soft carbonation.
