Description
The history of Parisis dates back to 2008 when Eric Esnault created a beer which is today the "mother" of Parisis: Bière de l'Yvette beer, which he then marketed exclusively in the region of Yvette. When Jonathan, then a brewer, met Eric by chance, the idea of an association seemed obvious for a major project: to create a quality beer for the Paris region. After more than 2 years of work, the two friends finally found a brew location in Epinay-sous-Senart. The first beer was brewed on August 8, 2012, and it was the beginning of a story.

Tap at Les Trois 8. Clear dark golden with almost white head. Sweet malts, tangerine, lights oats, flowery, light creamy, orange peel, grassy, soft alcohol. Over medium sweet and bitter. Over medium bodied too with a touch of alcohol in the finish.

Valt niet tegen. Schuimt veel te hard maar smaakt verder prima naar hop en wiet. Fris, groen, lekker.

Got in a trade with Shanex. 330 ml bottle into tulip glass, best before 5/15/2021. Pours fairly hazy deep orange/copper/amber color with a 1 finger fairly dense and rocky cream colored head with great retention, that reduces to a thin cap that lingers. Nice spotty soapy lacing clings on the glass, with a fair amount of streaming carbonation. Aromas of caramel, brown sugar, brown bread dough/crust, toasted biscuit, and nuttiness; with lighter notes of cocoa/roast, plum, pear, red apple, herbal, floral, wood, grass, pepper, and yeast/toasted earthiness. A bit too fruity/yeasty aromas, but not overwhelming. Nice and pleasant aromas with good complexity and balance of dark/bready/light roasted malts and light-moderate fruity yeast/earthy hop notes; with solid strength. Taste of big caramel, brown sugar, brown bread dough/crust, toasted biscuit, and nuttiness; with lighter notes of cocoa/roast, plum, pear, red apple, herbal, floral, wood, grass, pepper, and yeast/toasted earthiness. Light-moderate herbal, floral, woody, grassy, peppery, roasted bitterness on the finish. Lingering notes of caramel, brown sugar, brown bread dough/crust, toasted biscuit, nuttiness, cocoa/roast, plum, pear, red apple, herbal, floral, wood, grass, pepper, and yeast/toasted earthiness on the finish for a good bit. Great complexity, robustness, and balance of dark/bready/light roasted malts and light-moderate fruity yeast/earthy hop flavors; with a great malt/bitterness balance, and no cloying/astringent flavors after the finish. Light-moderate increasing dryness from lingering hop/roasted bitterness. Medium carbonation and medium-plus body; with a very smooth, creamy/bready/grainy, fairly sticky, and lightly chalky/resinous mouthfeel that is great. Zero warming alcohol for 6.2%. Overall this is a very nice amber ale. All around nice complexity, robustness, and balance of dark/bready/light roasted malts and light-moderate fruity yeast/earthy hop flavors; very smooth and easy to drink with the mellowly bitter/drying finish; great soft feel. Great rich dark/Munich malt complexity, balancing earthy hops, and restrained fruity yeast. Light residual sweetness with lingering dryness. A very enjoyable offering, and well made style example. Feels pretty English styled as expected on the yeast.

Pours fairly hazy/cloudy medium golden amber color with a 2-3 finger fairly dense and fluffy white head with fantastic retention, that reduces to a large cap that lasts. Thick foamy lacing clings on the glass, with a large amount of streaming carbonation retaining the cap. Fantastic appearance. Aromas of big lemon, peach, pear, melon, apricot, red apple, white grape, peppercorn, light banana/clove, wheat, cracker, white bread dough, lightly toasted biscuit, wood, herbal, floral, grass, and yeast earthiness. Very nice aromas with good balance and complexity of fruity/spicy yeast, earthy hops, and bready malt notes; with big strenght. Taste of big lemon, peach, pear, melon, apricot, red apple, white grape, peppercorn, light banana/clove, wheat, cracker, white bread dough, lightly toasted biscuit, wood, herbal, floral, grass, and yeast earthiness. Moderate peppery yeast spiciness; and herbal, floral woody, grassy, peppery bitterness on the finish. Lingering notes of lemon, peach, pear, melon, apricot, red apple, white grape, peppercorn, light banana/clove, wheat, cracker, white bread dough, lightly toasted biscuit, wood, herbal, floral, grass, and yeast earthiness on the finish for a good bit. Very nice complexity, robustness, and balance of fruity/spicy yeast, earthy hops, and bready malt flavors; with a great malt/bitter/spiciness balance, and no astringent flavors after the finish. Moderately crisp/clean finishing. Moderate increasing dryness from bitter/spiciness and carbonation. High carbonation and medium body; with a very smooth and moderately bready/grainy/sticky balanced mouthfeel that is great. Minimal warming alcohol for 6.5%. Overall this is a delicious Belgian blonde ale. All around nice complexity, robustness, and balance of fruity/spicy yeast, earthy hops, and bready malt flavors; very smooth, crisp, clean, and pretty refreshing to drink with the moderately bitter/spicy/drying finish. Great well rounded Belgian yeast complexity, noble hop presence/balance, and clean malt backbone. Minimal residual sweetness with crisp dryness. A very enjoyable offering, and impressively well made style example.

Medium-plus carbonation and light-medium body; with a very smooth, moderately bready/grainy/sticky, and lightly resinous/rindy balanced mouthfeel that is great. Zero warming alcohol as expected of 5%. Overall this is a very good pale ale. All around nice complexity, robustness, and balance of citrus/earthy hops, fruity yeast, and pale malt flavors; very smooth, refreshing, and fairly crisp/clean to drink with the mellowly bitter/drying finish. Nicely soft and not aggressive. Very flavorful and not watery for the ABV. Feels like a mix of Cascade and East Kent Goldings. Nice balanced mix of vibrant citrus/earthy hops, fruity English yeast, and a clean pale malt backbone. Minimal residual sweetness with crisp dryness. A very enjoyable offering. Feels more like an English pale ale than the labeled APA, but still well made.

Cette IPA sous Sénart, agréable est très honnête en jouissant d'arômes agréables autour du résineux, de l'orange, du miel et des épices mais également d'un bon équilibre. Elle pèche toutefois par une corpulence quelque peu limite et par une amertume qui, même si elle est par moment saillante, aurait méritée d'être un peu plus brillante et ciselée. Côté visuel, rien de transcendant avec un blond orangé voilé et une mousse blanche nappant par ci par là la surface. Le nez est intéressant sur le résineux, l'orange, le miel, la pêche et les fruits exotiques. Le duo Mosaic/Simcoe est plutôt bien utilisé. L'attaque manque cependant d'intensité, voire d'arômes avec une amertume modérée en avant accompagnée de pamplemousse, de résineux, de poivre et de miel. La deuxième bouche est plus intéressante. On y retrouve les arômes présents au nez, le poivre en plus. L’arrière-bouche est davantage sur l'amertume, qui se veut saillante, plus proche des 80 d'EBU affichés. Le final, d'une longueur acceptable se recentre également sur une amertume épurée avec résineux et pamplemousse. L'alcool à 7,6% peine tout de même quelque peu sur la longueur. Sans être une grande IPA, cette IPA sous Sénart est une bonne IPA.

Bottle.Hazy amber colour with small head.Aroma of rye bread and caramel nice malty with hint of brown sugar mild and easy to drink.
