Taste: along the same lines, a bit astringent, baked apples, apple skins and seeds.

First of all, an “ice quince” at 6%--really? 375mL bottle, pours a deep dark amber orange brown with a small beige head. Aroma has plenty of apple core, maybe some brown sugar attenuated out. Flavour is quite sugary, with plenty of apple core and brown sugar. Doesn’t have the complexity of a higher ABV/elite ice cider, but it’s pretty pleasant.

Amber-brown, some haze, weird looking. Fruity, light tartness, good juiciness, and then a decent quince character. It's actually not bad, but in an experimental sort of way.

Aroma: sweet and acidic, nice quince notes.
Taste: very intense - acidic and sweet, a lot of quince, some caramel and seeds, tannic.
Overall: very nice and unusual 🤩❤️

Pâle-doré, col fin blanc retombant lentement.
Franchement une belle réussite à tous les niveaux - balance idéal entre le caractère acerbe des pommes mais avec une prise délicate en retrait par le rum ce dernier confère un solide support de barrique avec un côté presque doux tropical de vanille Bourbon en retrait.
Le pétillant est au rendez-vous, ni trop sec, ni trop doux surtout avec l'apport de la barrique. Les variétés de pommes apportent aussi une bonne profondeur qui rend justice à ce cidre - mais mis à un autre niveau par le rum.
Un mot - grandiose. Et de l'aveu de pas mal autour de la table, une très belle réussite.
Pour ma part, une version plus aboutie que la version Bourbon.

Bottled. Clear brownish amber, still. Concentrated aroma of ripe pears, notes of port. Sweet with full body and rounded, viscous mouthfeel. Warming sticky pears, port, honey. Peppery warming finish.
