Barreled Souls Brewing Co. is owned and operated by Chris Schofield and Matthew Mills. Chris and Matt both grew up in Wells, ME and have been friends since the fourth grade. The idea of opening a brewery together came up many times over the years, usually while imbibing on some stellar examples of the craft. The conversation got serious in the summer of 2012 and two years later Barreled Souls was open for business.
Matt and Chris set out to create the kind of beers they would want to drink and the kind of brewery they would want to spend time at. This meant focusing on making a large variety of beers, using unique ingredients and processes paired with a large, comfortable and professionally run tasting room that carries 12 varieties on draft.
The brewery operates a fifty gallon brewing system. All of the beer produced at the brewery undergoes primary fermentation in oak barrels. The fermentation system is based off of the Burton Union system, which was a method of fermenting beer developed in England in the 1800βs. The benefits of this system are really three-fold.

2023 Vintage. 545/1260. Aroma is mellow Knob Creek and caramel malts.
Flavor is it warm melted caramel mixed with Knob Creek bourbon with a mild trace of spice. ABB is nicely hidden. This is excellent.

Bottle shared with membership group. Dark brown with almost no ring of head, light viscosity, no lacing. Aroma is well balanced bourbon, caramel. Taste is well balanced strong bourbon, caramel. Velvety smooth, medium bodied, soft carbonation, finish as taste. Not complex but well balanced and comforting. Wonderful palate. Holy hell--14.5%?!

Lighter than typical. Dark amber with ruby hues. Small, greige head.
Sweet bourbon, with light cherry and light vanilla. No aggressivity, no alcohol, no excess sugar. Just so mellow and rounded and yet nicely aromatic.
Rich bourbon with cherry, vanilla, and long caramel. Big spice on the finish with good "antique"-like whiskey character (spicy, woody, rounded, deep). Lingering cherry-vanilla and sweet bourbon. Just a touch, touch sweeter than I'd prefer, ideally. No alcohol whatsoever.

2023 Vintage. 227/1220. Aroma is rye bourbon and mild apple brandy. Flavor of raisins, mild caramel, with a soft traces of apple brandy. Mild spice. Light alcohol only shows after finishing the glass. Lots of flavor.

Bottle (9/25/23) shared with membership group. Virtually opaque dark brown, ring of head, nice viscosity, no lacing. Aroma is strong caramel, earthy malt, apple brandy, light oak. Taste is mix of apple brandy, rye, oak, caramel. Frothy texture, soft carbonation, finish as taste. Wonderful aroma, with taste close behind. Nice.

Clear, dark mahogany with a deep hazelnut-cola hue. Light tan head fades steadily to partial cover.
Sweet (but not too) apple in the nose with no aggressive alcohol or excessive sugar. Maple, vanilla, caramel are all round and homogenized. Nice layers of barrel, with sweet fruitiness, vanilla, and deeper acid at the end.
Rye spice is BIG, bold and softened by sweet apple character. Nice and attenuated, though still quite malty with lots of caramel and vanilla. Maybe just a shade sweeter than I'd prefer and there's some strength on the end. Almost a peppery, strong, bitter brandy. But hard to argue here. They've absolutely killed it on the barrel expression here.

500 ml. Bottle. 2023 vintage. 954/1200. Aroma is almost pure sugar. Flavor is mild vanilla, soft hazelnut nut followed by light coffee. It shows a bit to much sugar in the finish to be real enjoyable.

Bottle (8/1/23) with membership group. Opaque black with ring of head, nice viscosity, no lacing. Aroma is subtle hazelnut, stronger vanilla, roasted malt. Taste is strong hazelnut, vanilla, sugar, bit of alcohol harshness. Frothy texture, soft carbonation, some alcohol harshness, sugary sweet. Desirable elements are here but other, less desirable elements as well.

Smells beany, with typical moderate sugar of their non-BA beers. Touch of glue? Not super hazelnutty, but there's a spice to it, I guess. Not getting much vanilla. Oh boy...
Not awful up front, as the rich hazelnut pleasantly displays itself prominently. Unfortunately it gets really sweet from there, exacerbated by the soft vanilla. Cocoa, coffee, bitter alcohol and dark roast with maybe a touch of glue. Not their worst non-BA by a large margin. But still so god damned underattenuated.

9/2/24 621/1020 aroma is bananas, willett, barrel. Taste is vanilla and bananas, loads of bourbon with a nice kick in the finish.
