Description
Established in 2014, owner Seamus McMahon has set up a lovely brewery in one of the old sheds, located behind the milking parlour. This brewery is set up on a working Dairy Farm. The team have renovated the shed to exacting specifications. The brewery is set amongst the rolling drumlins of County Monaghan. Our aim is to create distinct beers that are brewed with care and affection. We have created a range of well balanced and flavoursome ales that reflect the changing face of the beer market in Ireland.

Clear dark amber, small, foamy, tan head. Aroma of dried plum, raisin, brioche, hard caramel, green tea, red apple, vanilla, bourbon. Taste has sweet red apple, raisin & fig in a caramelly, peanutty malt body surrounded by herbal tea notes and a whiff of butter. Herbal hops in the finish, bitter orange peel, pink grapefruit almost, slight vanilla and warming bourbon alcohol. Medium body, oily texture, average carbonation. Rich and malty, but 'modernly' bitter BW.

Imperial porter aged on Irish whiskey barrels (hence the -e- in ‘whiskey’), thanks to Craftmember for sharing! Moussey, pale greyish beige, dotty-lacing, slowly breaking head, black(ish) robe with deep mahogany glow. Aroma of coffee cream, mocha ice cream, touch melting milk chocolate even, caramel, whiskey, beef stock, cappuccino, fresh bayleaf, dry tree leaves, coffee grounds, nutmeg. Sweetish onset but somewhat restrainedly so (in fact less sweet than expected), notes of prune and dried apple peel, medium carbonated; full, rounded body, bit oily, with toasted-walnutty, dry-caramelly and brown-bread-crusty malt layers filling the mouth. Roasty, coffee- to chicory-like bitterness comes quickly in this one, supported by a leafy hop bitterness and woody tannins, as well as a peppery, warming, whisk(e)y-like alcohol effect in the finish. Very solid and oldskool, as usual in this brewery’s stouts and porters.

Imperial stout from the country where it originated in the 18th century, aged on whiskey barrels from said country, thanks Craftmember for sharing. Greyish pale beige, moussey, shred-lacing, breaking yet retaining head on a very dark chocolate brown beer, as good as black in fact, with misty mahogany edges. Aroma of walnut paste, soft Irish whiskey, coffee grounds, deep-fried parsley, toffee, young oak wood, burnt potato chips, dried thyme, mocha ice cream, chewing gum somewhere, almond, nutmeg. Restrained in sweetness yet rounded, with a touch of raisin and a light hint of smoked prune or chewing tobacco somewhere, softishly carbonated with full, rounded body. Some black olive-like umami (even a whiff of beef stock) lingers over a smooth toasted pecan-, bitter chocolate- and brown bread crust-like middle, with again that vague smoky (pipe tobacco) touch at the back coming from the whiskey but very softly so; coffee grounds-like roastiness plays a part as well, but not too emphatically, while gentle woody tannins add dryness without becoming outspokenly astringent. Warming whiskey in the finish as can be expected, but like the other barrel features (the wood itself), kept relatively subdued and in that sense remaining well in balance with the actual beer. Opens gradually upon warming – one for the lovers of more restrained ‘oldskool’ imperial stouts.

Appearance: Opaque deep brown to black with a nice beige frothy head. Aroma: Roast & toast, prunes, other dried fruits, floral hop. Taste: Dry, malty & hoppy. Roasted, burnt bread, chocolate, pleasantly hopped. Lingering hoppy ending. Mouth feel: Light to medium body, soft carbonation. Summary: Not bad.
