Description
The important elements for brewing sake are "rice," "water," and "people. At Manotsuru, we have added "Sado" to these elements to create the phrase "Shiho Wa Brewing," which means brewing with the harmony of four treasures, and this has become our motto for sake brewing. The family crest of the brewery, "Yotsumame," is also a reference to this motto, and the brewery is always in pursuit of "well-balanced sake" that makes full use of all of the elements. Sado Island, where the Manotsuru brewery is located, is working to protect the natural environment and ecosystem in order to release the Toki herons. An island that is friendly to egrets is also friendly and safe to people. We grow "Koshitanrei" rice and "Gohyakumangoku" rice on this island under contract.

300ml bottle from Japan Centre. Clear very pale yellow colour, some short-lived bubbles on top and aroma of rice, fruity, bready hint. Taste is sweet, rice, fruity, floral, cherry hint, caramel, with some earthy boozy notes. Medium bodied, low carbonation, drying finish. Quite drinkable.

Drank at room temperature. The consistency of the liquid is clear. The color is a hint of yellow. The olfactory intensity is normal, and the olfactory persistence is sufficient. The taste on the nose - dominant aroma is of malted rice Koji. The taste on the nose - secondary aromas find impressions of melon, coconut, spring water and pepper. The first impression of intensity in the mouth is of robust and solid sake but not particularly powerful. The aroma on the tongue is slightly dry. The body is full. The taste intensity is high, and the taste persistence is good. The taste is pleasant. The finish is velvety, long and clean. The palate arrives characteristics of white peach, honey, kiwi and mimosa for a fruity and delicate aroma.

Bottle at home. Pours clear with slight haze. Nose is light melon and rubbing alcohol. Tastes of vanilla, papaya, melon, earthy bitterness, some brine, rice, and alcohol. Palate is hot and harsh. This is fighting sake.
