720ml bottle from Yamamoto. Clear and icy looking. Tiny bit of carbonation. Grainy, ricey nose, apple, Asian pears, lightly spicy koji. Sweet and surprisingly fruity. Strawberry, apple, citrus,pear. Lightly carbonated, full body. Not super refined, but nice.

Big thanks to Erzengel for sharing! A clear near colourless to slightly yellowish colour. Aroma of sweet strong rice fruts, melon, ripe fruits. Taste of moderate boozy rice juice, yellow fruits, melon, grains.

720ml. Cap popped open. Never had this with a Sake. Earthy wooden nose. The Sake starts still slightly carbonated with a rich and deep body: concentrated pears, peaches. A bit viscous, sweetish dry, lots of grain and concentrated sweetness. Interesting aroma, deep, rich and slightly alcoholic in the end. Fruity alcoholic earthy grainy finish.

720 ml bottle. Icy and thick looking. Citrus, rice, vanilla, peach, koji spice. Nice, fresh nama nose, with big rice.Massively fruity flavor, citrus, green apple, ripe peaches, cantaloupe, lemon, very big fruit. Quite sweet. Lightly spritzy. Just a bit sweeter than I would like. Full 80% junmai body. Rich and silky. Like this. Wish I had kept some of the other for a side-by-side comparison of the two rices. It's a fascinating project, for sure.

720 ml bottle my mail order. Clear, icy, slightly oily. Fruity, slightly flowery nose, citrus, green apple, cedar, spice, rice. Sweet and full bodied. Rice, apple, pepper, stone fruits, light tropical fruit. rich, fruity, ricy, creamy. Hints of vanilla.The low polishing ratio certainly makes for a full, creamy, rich body and flavor, yet it is unpasteurized and fresh, with great fruit and a bit flowery as well. Lovely stuff and great value as well.

720ml bottle. Fruity nose. Lots of pears and fruity rice there. The Sake starts very fruity with a very mild body. Easy to drink, sweetish pears and melon, very light and fruity but not too fragile. Easy to drink, not too deep but nice, full bodied and very round.

Glass at Shiori Bukkoji. Slightly thick looking with a bit of yellow tint. Rich-ass nose, rice and grain, cfream, vanilla, apple. Heavy, thick, slightly carbonated which really works to lighten the palate of this 80% polish. Wow. Interesting and fun stuff. Grainy rice, nice acidity.

Drunk cold (recommended temperature). The consistency of the liquid is clear. The color is a hint of yellow. The olfactory intensity is normal, and the duration is sufficient. The taste on the nose - dominant aroma is of malted rice Koji. The taste on the nose - secondary aromas finds vanilla, mimosa, white peach, wood and gin. The first impression of intensity in the mouth is of medium strength’s sake. The body is round. The flavor intensity is normal and the flavor persistence sufficient. The final mouth sensations are of drinkable sake. Notes of melon, apricot and almond arrive on the palate. VARIATIONS: Plus, drunk at room temperature (My vote 5.6/10) Drunk at room temperature. The olfactory intensity is faint, and the duration is short. The nose taste - secondary aromas traces honey and soy. The first impression of intensity in the mouth is of medium strength’s sake. The umami is hinted at. The body is medium. The flavor intensity is normal, and the flavor persistence is short. The final mouth sensations are easy to drink. The aroma in the mouth brings notes of vanilla, popcorn and soy. Plus, drunk lukewarm (My vote 5.4/10). Drunk lukewarm. The olfactory intensity is normal, and the duration is sufficient. The nose taste - secondary aromas traces coconut and fruity aroma. The first impression of intensity in the mouth is of diluted sake. The body is medium. The flavor intensity is light, and the persistence is short. The final mouth sensations are very easy to drink. On the roof of the mouth there are hints of mushroom and almond.

Taster at Jam. Rice nose, lemon, orange. Great balance. Nice acidity with light citrusy sweetness. Great stuff. Light, crisp.
