At Moody Tongue, our goal is to create thoughtful, exciting beers that blend familiar flavors with quality ingredients through our philosophy of culinary brewing: using a chef’s mindset to highlight flavors and aromatics in balanced beers.
Culinary brewing rests on three principles:
1. Sourcing the highest quality ingredients
2. Understanding how best to handle those ingredients to showcase flavors and aromatics
3. Knowing when during the brewing process to incorporate these ingredients.
Brewmaster Jared Rouben draws on his culinary training to forge this connection between the kitchen and our brewery, building recipes for our beers in the same manner a chef would for a dish. Our beers are created with simplicity and balance in mind and can be enjoyed both on their own or paired with food.

Tasted at December Beermalade tasting in Bratislavka. Dark amber color with ,medium beige head. Aroma of caramel malt, plums, some nuts, whiskey, light sourness. In taste dominates alcohol, too much alcohol, caramel amlt, nuts, plums, whiskey. OK.

Bottle shared at the CBJ tasting, thanks to Kenneth, 12/06/24. Muddy looking murky brown topped with a beige head that thins to a swirl. Nose is dried fruit shreds, cocoa sprinkle, toffee, booze, figs. Taste comprises toffee, spice, fruit cake mix, caramel, brown sugars, dates, figs. Full bodied, fine carbonation, semi drying close with a mellow boost offered. Okay sipper if no wow.

Bottle at Bratislavka tasting. Malty aroma and taste, caramel, plums, peat notes, light to medium bitter, light sour and sweet. Medium to full body, malty plummy bitter sweet finish with sour notes. Ok.

At a Beermalade tasting. Rather thin body, med-low carbonation. There is lots of stuff going on here, but the overall impression is just a big mess. Medium sourness, medium sweetness, medium apple, medium nutty caramel, light tartness, apple rind. Rather light whisky character, peat rather contributes to its disharmonic feeling rather than broadening the character. This had big ambition, but delivers little. Meh.

Clear mahogany brown colour with thin head and no gas. Lots of sweet malt. Peaty background note. Mild acidity and very thin mouthfeel so not a great success. Still some plusses though.

Bottle from Trader Joe's. Light orange candy nose. Pours hazy gold under a thick nose. Dunno. Taste is kind of a Blue Moon with a bit more orange peel. A nice swig, but not that impressive. Maybe picking up some adjunct as well.

Pours near black with a small tan head. Smells of chocolate and malt. The flavor is sweet with chocolate and roast malt and maybe a little caramel but this is basically a sweet chocolate porter.
