720mL bottle drunk July 2022.
Clear, glassy.
Big, fruity nose, koji-heavy nose with light coconut and floral notes on the end. Obviously a New England Sake.
Juicy, rich, viscous and rather clean on the end with big fruit notes of citrus and tropical mango/papaya. Lingering vanilla, mild nuttiness and more creamy-sweet notes. Not too sweet. I like the fruitiness. Definitely interesting.

Drank cold. The olfactory intensity is normal, and the olfactory persistence is sufficient. The taste on the nose - dominant aroma is of malted rice Koji. The taste on the nose - secondary aromas finds impressions of vanilla, kiwi, cooked pear, mimosa and white melon. The first impression of intensity in the mouth is of solid sake. The body is full. The taste intensity is high, and the taste persistence is good. The taste is pleasant. The final mouth sensations are ready to drink. Hints of melon, fruit, apricot, herbs, mushrooms and spring water linger on the roof of the mouth.

300ml bottle from Japan Centre. 15%. Clear very pale yellow colour, no head and aroma of rice, liquorice, earthy. Taste is rice, tangy, earthy, sweetish with grassy bitterness. Oily mouthfeel, medium bodied, low carbonation, drying boozy finish. Quite OK

One cup/can at Hojoko, 2/9/18.
Clear, opal-rice-butter-ivory. Basically what all sake looks like (non-nigori).
Cedary (light) and very nutty with lots of mineral, hard water and light honey-vanilla-creme behind it all. Very soft, well-lagered and showing alcohol. Perhaps softened more by the taru tannin.
Clean and dry in the mouth with a medium viscosity. Lovely, piquant black currant on the very finish brightens and balances the soft, sweet and mineral notes. No alcohol or flaw. Very soft, drinkable and flavorful.

180ml paper cup from the brewery. Drank from the cup on the train. Fresh, sweet rice and light stone fruits. Mild and smooth. Good enough for the cheap price.

Taster at the brewery. They said it was only available here, so it might be different. Nose of stewed pears, rice, vanilla. Smooth and fruity, quite pedestrian overall but enjoyable.

Taster at the brewery. Minerally nose, rice, apples. Sweet at first but finishes super dry and cirsp, great \"kire.\" Cuts right off. Very interesting and fun.

Taster at the brewery. Funky ass kimoto nose, acidic, vanilla. Nicely acidic flavor, green apples, yogurt. Good example of the style.

Bottle. Disclaimer: I know nothing of sake or how to assess it. Friendly necktag says 7C, so about 7C it is. Pale yellow. Rich and mildly funky aroma with lime peel. A bit kefir-like - still, but with a threat of creaminess. Rich and a little sweet at first with apricot and lime peel, then as it dries out there’s a firm acidity and a little booze (surprisingly little really). Not bad at all, maybe a little heavy for me before the dryish and nicely astringent finish.
