17/2/2023. Bottle shared by danlo, cheers Ed! Completes my Sake styles, cheers again!. Pours clear with a hint of yellow and no head. Aroma is fragrant rice, caramel, light wood, spicy notes, hints of Christmas cake. Taste is peppery spic, moderately bitter. Medium body, oily, low carbonation. My first Taru, this was a slow burner and quite different but very likeable. And 13/1/2026. Christmas gift from some posh shop in London. See photo. 15% abv. Some light chocolate hints too this time. Enjoyable.

500mL bottle with 2021 on the cap, drunk 1/1/23.
Shook the sediment up, which in retrospect, I'm not sure I wanted to do, even though it's a nigori.
Glue, tape, plaster, medicine. Nothing particularly pleasant, though not actually alcoholic.
Sweet, rather muddled, though with enough nutty dryness and very light acidity on the end. Kind of mindless, sweet drinking. Doesn't have the flaws apparent in the flavor as the aroma would suggest. Disappointing, but not a drain pour.

720mL bottle drunk July 2022.
Clear, glassy.
Big, fruity nose, koji-heavy nose with light coconut and floral notes on the end. Obviously a New England Sake.
Juicy, rich, viscous and rather clean on the end with big fruit notes of citrus and tropical mango/papaya. Lingering vanilla, mild nuttiness and more creamy-sweet notes. Not too sweet. I like the fruitiness. Definitely interesting.

Bottle/jar that looks like a can from the Davis Food Co-op. Pours water clear. Aroma of rice wine and some fruit that's greenish. Green melon? Approaching med body. Flavor is fairly dry, but there's a bit of sweetness. Fruit still seems green melon. Rice wine is definitely in the mix. Not exactly bitter, but there's something like that. Heat is detectable. Interesting. Approachable.
