We devote ourselves every day to putting into practice our corporate philosophy, “Contribute to the rich and healthy lives of people using our long fostered fermentation techniques as our core.” We cherish the Kimoto method, a traditional sake brewing method that has long been handed down in Nada since the Edo period, but also continue to take the initiative in technological innovation.

One cup/can at Hojoko, 2/9/18.
Clear, opal-rice-butter-ivory. Basically what all sake looks like (non-nigori).
Cedary (light) and very nutty with lots of mineral, hard water and light honey-vanilla-creme behind it all. Very soft, well-lagered and showing alcohol. Perhaps softened more by the taru tannin.
Clean and dry in the mouth with a medium viscosity. Lovely, piquant black currant on the very finish brightens and balances the soft, sweet and mineral notes. No alcohol or flaw. Very soft, drinkable and flavorful.

180ml paper cup from the brewery. Drank from the cup on the train. Fresh, sweet rice and light stone fruits. Mild and smooth. Good enough for the cheap price.

Taster at the brewery. They said it was only available here, so it might be different. Nose of stewed pears, rice, vanilla. Smooth and fruity, quite pedestrian overall but enjoyable.

Taster at the brewery. Minerally nose, rice, apples. Sweet at first but finishes super dry and cirsp, great \"kire.\" Cuts right off. Very interesting and fun.

Bottle. Disclaimer: I know nothing of sake or how to assess it. Friendly necktag says 7C, so about 7C it is. Pale yellow. Rich and mildly funky aroma with lime peel. A bit kefir-like - still, but with a threat of creaminess. Rich and a little sweet at first with apricot and lime peel, then as it dries out there’s a firm acidity and a little booze (surprisingly little really). Not bad at all, maybe a little heavy for me before the dryish and nicely astringent finish.

Tiny cup with ramen the sweetness helped balance the spicy noodles a touch. Nose is vanilla and cedar. Tastes of vanilla, cedar, cotton candy, bubblegum, some alcohol. Too sweet for me and oily texture.
