Bottle shared at a Japanese restaurant in The Hague. Near water appearance. Aroma of sweet rice, light floral notes, vanilla and light grape. Flavour is above moderate sweet.

Been reading about Fall sakes in a newsletter I get so had to try one when given chance. Bottle at home late Sunday. Yellowish pour. Nose is wet wood amd some rice. Tastes of nice rice, woody, light chestnuts and walnuts, hint of wine residue, touch of sweet melons. Thicker fall appropriate brew. Pretty nice.

180ml can. Ricy nose, some vanilla and spice, a touch of yogurt. Bit yellow tinted. Sweet rice flavor, vanilla, lightly peppery, rather plain but not bad.

Chilled glass at a restaurant. Pours clear and just slightly darker than water. Aroma is of slightly sweet vanilla/frosting. Flavor is quite light, again mostly the medium sweet vanilla frosting, with just tiny hints of cucumber and light fruit like pear. No real alcohol aroma or taste. Body is fairly light for my taste, but it’s a decent sake.

Small one cup bottle. Rice aroma, a bit dusty, with some fruit, asian pear. Slightly oily and shiny looking. rice flavor, sawdust, earth, a bit of fruit and alcohol. Slightly funky, from the Kimoto method, I suppose, but rather plain.

From first sniff to the first sip, I was in love. My first daiginjo, so take this rating with a grain of salt, but I must admit, I was quite shocked.
I was expecting daiginjos to be the austere, conservative, flawless/perfectly executed type, but perhaps lacking a bit in some funky character. Nope, not this one anyways.
Legs and all, with as clear and clean an appearance as I’ve seen. Fruity notes abound and it almost seems to have as much body and substance to it as a nigori. But yet, the liquid never seems heavy nor does drinking the stuff get fatiguing. Rich, but yet spritzy and playful, with tangerines, apricots, peaches and rosehips. Wow. Sensory overload and truly divine. Worth the price tag, in my mind. The flavor somewhat outdid the aroma in sheer complexity.
