(My vote 7,0/10) Drank cold. The consistency of the liquid is a hint of yellow. The olfactory intensity is high. The olfactory continuity is sufficient. The taste on the nose - dominant aroma is of malted rice Koji. The taste on the nose - secondary aromas are of almond, cooked pear, spring water, humans and white mushrooms for a light taste. The first impression of intensity in the mouth is of robust sake. The aroma on the tongue is rather dry. The body is full. The taste intensity is high, and the persistence is sufficient. The taste is pleasant. The roof of the mouth recognizes impressions of peach, apricot, gin, resin, spices, anise, mineral and umami. VARIATIONS Plus, drunk at room temperature (My vote 6.6/10). The color is a hint of yellow. The olfactory intensity is normal, and the duration is sufficient. The nose taste - the dominant aroma is of malted rice koji. The nose taste - secondary aromas finds impressions of vanilla, dried apricot, mimosa and juniper, for a delicate aroma. VARIATIONS Plus, drunk very hot (My vote 7.2/10) The color is straw yellow. The nose taste - secondary aromas find hints of caramel, umami, mineral, almonds, mushroom, spices and anise. The first impression of intensity in the mouth is of undecided sake. The aroma on the tongue is strongly dry. The body is round. The gustatory intensity is normal, and the persistence is sufficient. The final vocal sensations are ready to drink. The roof of the mouth carries notes of condensed milk, wheat, white peach, dried apricot, popcorn, spices, melon and umami.

Bottle pour at Raisu, pours a clear blonde. Aroma brings out lychee, stone fruit, gentle white wine, light floral notes. Flavour is fairly light, with subtle lychee and a touch of pear. Smooth and relatively dry. Easy.

Bottle pour at Raisu, pours a clear pale yellow. Aroma brings out floral dry white wine, light lychee, and moderate alcohol. Flavour is on the sweeter side, with lychee, stone fruit, floral notes, and some white wine. A sweeter, lychee-like character. Very nice.

Bottle from the supermarket. Clear like water. Nose is funky koji, more like shochu than sake, rice, simple. Flavor is rice and kuro koji, again, very much like a weak shochu. Very dry, almost no fruit. Somewhat tart and citrusy. Don’t care for this.

Drank at room temperature. The consistency of the liquid is crystalline. The color is deep amber tending to be reddish, practically similar to the color of whiskey. The olfactory intensity is very high and rich. The continuity is considerable and long. The taste on the nose finds impressions of caramel, tobacco, pear, spices, cognac and ripe fruit. The first impression of intensity in the mouth is of robust, vigorous and solid sake. The aroma on the tongue is very dry. The body is structured, not heavy but ductile. The taste intensity is very high, and the taste persistence is good and long. The taste is enjoyable for the sake that has its own personality. The final mouth sensations are of dangerous drinkability, for an excellent sake that is absolutely to be drunk. The aroma in the mouth bears signs of caramel, tobacco, cognac, smoke, dried fruit, pepper, oak, soy, white flowers, umami, caramel, bread crust, peaty and warm.

720 ml bottle from Lawson's. Dry rice nose, grainy, a bit creamy. Clear and icy. Dry flavor, a bit of warming rice, some citrus and stone fruit. Simple and very, very dry. More than I really like.

720 ml bottle from Hanshin Dept. store. Big ginjo-ka nose, pears, spicy and fruity. Sweet, clean, with a very spicy rice finish. Full bodied. Great.

Bottle from Liquor Mountain. Nose is rice, a bit creamy, vanilla, white grapes. Oily, icy looking. Done dry flavor of rice, koji, a touch of vanilla, grape and apple. A bit plain but clean, crisp and well done dry junmai.

300 ml bottle from Kanazawa Station. Big, fruity nose, esters, peaches, apple, melon, pepper and spices, sweet creamy rice. Nice nose. Clear, watery. Sweet start, ends with dry booze. Very ricy, fruity, vanilla, cream, peaches, apples. Full, silky mouth. Nice. Good peppery finish. Sweet, but not over the top.

300 ml bottle from Kanazawa Station. Slightly yellow. Ricy nose, vanilla, some yogurt. Sweet at first, then dries out nicely, vanilla, rice. A rich junmai that does dry quite well. Yamahai I suspect.
