Tasting @King Arthur (Ciampino). Giallo paglierino, molto blando, limpida, schiuma assente. Al naso note etiliche, di riso, pane, frutta secca, frutta matura. In bocca è abboccata, con note di pane e frutta secca. Corpo pieno, carbonazione brillante. Interessante, ma nulla più.

The taste is pleasant. The aroma in the mouth bears signs of soy sauce, sherry, earthy, honey and dried fruit.

The taste on the nose - secondary aromas include melon, dried apricot, mushroom, almond, oak, mimosa, umami and bamboo wood, for a strong flavor. The first impression of intensity in the mouth is of powerful sake. The aroma on the tongue is rather dry. The body is full. The taste intensity is high, and the taste persistence is good. On the palate the aftertaste is intense. The taste is pleasant. The final mouth sensations are of drinkable sake. In the mouth the aroma is cognac, nuts, dried fruit, soy sauce, sherry, vanilla and yellow peach.

900 ml bottle from Family Mart. 17%. This is a step up from their regular. Pours with the slightest yellow tint, somewhat thick. Nose is rice and koji, yamahai acidic funkiness, light lacticity. Flavor is mildly sweet and very creamy, lactic acid, rich rice and rice pudding, umami galore. Lightly fruity and a bit spicy. Full, creamy body. This is old school all the way--probably close to what it tasted like around 1800. It won't appeal to many who love ethereal daiginjos, but I like it. Probably good warm in the winter, I found it best on the rocks in summer. It is strong and rich enough to easily stand up to the ice.

Taster at Jam. Medium yellow, a bit thick. Dry nose, ume plums, a bit oxidized, some cheese. Flavor is raisin and plum, peaches, vanilla, a bit of cheese. Nice, but not great, koshu.

Bottle at home the local got new shipment of sake this seemed overpriced for a futsu but who knows, dumb NYC. Pours yellow water. Nose is some melon and boozy. Tastes of overripe honeydew,almonds, booze, light vanilla, fine sake.

Issho-bin. Rather thin appearance. Fruity aroma with cedar and rice. Straightforward. Spicy, fruity flavor with citrus and vanilla. A nice, full-flavored sake. Pretty good for a futshu-shu. Makes a decent, rounded, spicy atsukan as well.
