Pour from a 720 ml bottle. Clear, nose is rich rice, acidic kimoto funk, light vanilla and lemon. Light and full flavor, lightly funky, brilliant rice, citrus and stone fruit.

Glass at Jam. Light and fruity nose, grapes / white wine, light apple. A bit yellowish. Very elegant flavor, nice acidity, just a touch of wood, again grapes. Very silky and impressive.

Glass at Jam. Rice pudding nose, vanilla, grains. Sharp citrus fruit nose, brilliant citrus flavor; grapefruit, lemon. Crisp as hell and very original.

Taster at Jam. Made like it would have been made around 1700. Slightly salty nose, sweaty, with grapefruit. Enormous flavor of passion fruit, big and lovely fruitiness, with a nice tartness. Shocking and interesting fruit flavors, hard to believe really. Also, I can’t imagine that sake in 1700 was this refined. They are obviously doing some things like in the old days, but the overall quality is far too high to imagine they could do this then!

Taster at Jam. Citrus, apples in the nose. Nice acidity in the flavor, kimoto type, apples, lemon. Clean, crisp, with lovely tart fruits. Really interesting, complex, old style retro. Love their stuff.

Glass poured from 1.8 l bottle. Nose is tropical fruit and oranges. Full and rounded flavor, great citrus and stone fruits, lightly tropical. Smooth and big. Great sake.

Taster at Jam. big fruity nose--juicy, tropical. Sweet, super fruit flavor, esters, tropical fruits, melon, mango. Audaciously sweet and fruity, but a good amount of acidity makes it just lovely, like a Sauternes in some ways.

Taster at Jam. Clear and icy. Nose or orange, lemon, nice citrus. Clean, crisp citrus flavor. Nice acidity and huge, fun fruitiness Very summery and original, with almost all koji mai being used.
