Taster at Jam. Uses a special koji usually used in making shochu spirits. Shiny, oily appearance. Grainy nose, lots of rice. Icy, acidic flavor, a bit funky from the koji, and also just a bit watery. Not so great, but interesting.

Taster at Jam. Huge fruit nose, grapes, cherries, peaches. Very, very sweet, honey, mizuame, and tons of fruit. Decent acidity almost balances. A great dessert sake, but a bit too sweet for me.

Glass at Jam. This was a limited release bottle from 2012. Fruity, flowery nose, dry and clean. Very fruity flavor, herbal, yet dry. Citrus, orange, pears. Nicely acidic. Dry and lemony. Very nice.

Taster at Jam. Estery nose of stewed fruit: peaches, melon. Round and fruity, with orange, grape, peach. Full, oily body. Nice stuff.

Glass with dinner at Sopa Nippon after work. Pours clear with fruity nose. This balanced and savory with some melon, vanilla, and floral
