Bottle at Ante, Newtown. Clear pale yellow gold colour, no head and aroma of rice, fruit. Taste is sweet & tart, rice, savoury notes, with some acidity and booze. Medium bodied, low carbonation, drying boozy finish. Quite drinkable.

Really rich, aged, olive-like character with earth, mineral and kelp.
No overt Cryptomeria, but it's rich, luscious, drying on the finish. Spice, olive brine. Lingering pepper, pearled onion, umami, seaweed. Rich, but mellowed rice sugar. Lovely.

300ml bottle from Ueno. Woody nose with slightly sweetish rice. The Saké starts mild with neutral parts. Easy to drink, sweetish rice with hints of wood in the back. More wood in the end, very dry with a nice grainy but not too deep finish. Nice woody cedar remains with sweetish rice on the tongue.

Bottle pour at Asano. Buttery nose, caramel, toffee, green apples.. Yellow. Tart and acidic, lactic, with apple, fruity. Bitter finish.

Taster at Kuboshima. Brewed in 2016. Clear, bit of yellow tint, icy. Slightly oxidized, a bit lactic, rich rice pudding nose. Round and mellow, acidity is low but very earthy and a bit oxidized. Approaching koshu feeling.

Taster at Kuboshima. Oily, lightly hazy, whitish. Big fruit nose, peaches, grapes, apples. spicy, prickly, smooth and full with ripe peaces, white grapes, sweet and very fresh. Shiboritate feeling is big time. Great.

Glass at Tsuchinoko. Yellowish gold color--very strange and cool color. Lactic acid nose, vanilla, cream, rice. Sweet and sour flavor, milky, vanilla. Good kimoto-style.

Taster at Jam. Yellow, oily. Funky nose, light smoke, peaches, rice. Sweet and fruity, nice acidity, some funk, light smoke. Interesting and good.

Glass at Wachi. Yellowish tint, clear. Funky nose, caramel, milk. Very funky yamahai flavor, vanilla, caramel, mizuame, a bit cheezy as well. rich and full.
