Among the key figures in our cider-making process is Stephen Hayes, a retired doctor and cider producer in Southampton who supplies us with the finest apples from his orchard. With his dedication to quality and his deep knowledge of cider production, Stephen has become an invaluable partner in our journey, infusing each batch with the essence of his expertise and passion for the craft.

500ml bottle from Minds Eye Brewing. Clear deep orangey golden colour, bubbly head that dissipates to a thin white rim and aroma of rich apple, caramel, orchardy funk. Taste is sweetish, appley, ripe fruity, caramel, with orchard floor, barnyard, leathery funk, some tartness and drying earthy tannin. Medium bodied, low carbonation dry funky tannic finish. Nicely drinkable.

Bottle from producer's own stall at a market at Peterley Manor Farm, Prestwood. The friendly producer said it was dry but the bottle oddly said medium sweet - it was definitely dry on tasting though (as I'd expect a champagne cider to be!) so I've entered it as that. Also their website said it was 6% but the bottle I tried was 7%. The usual variability with cider then! Anyway, it's still, and a burnished gold colour. Theres's tangy apple and quite a lot of tannins. No farmyard though - it's got a touch of elegance. Drying finish. Decent cider this.
