Description
Founder of Dot Brew, Shane Kelly, has made a name for both himself and his brand over the last few years through a keen passion and love for experimentation when it comes to his brews, most notably in the form of barrel ageing and hybrid styles. The Dublin based brewer has carved out quite a niche, developing a unique style and approach which has helped put Dot Brew at the forefront of the Irish Craft Beer scene. While the beers are brewed in various microbreweries in and around Dublin, they are then brought home to Dolphin’s Barn. The site is home to about 50 barrels in a small warehouse which Kelly refers to as his ‘spice rack’, with casks ranging from French oak, Mexican tequila and American bourbon, to name but a few.

(Keg at Pien, 20190301) The beer poured pale amber and lightly hazy. Its head was medium sized and white. Aroma had fruitiness, dried apricots and lightly pine. Palate was medium bodied with medium carbonation. Flavours were fruitiness, pine, biscuits, malts and bitterness. Aftertaste was hoppy and bitter. A bit confusing brew but still tasty.

Draught at Brewdock. Murky brown with a full head. Aroma of yeast and spice. Flavour issour fruit wheat, a little spice on a warm light booze base.

Bottle at Teeling Distillery, Dublin. Black with large beige head. Hops. Pine in aroma, roasty, smooth, some chocolate, bitter finish. Slightly sourish. Good after, less good mid. Medium bodied.

Aroma is moderate to heavy malty, chocolate, coffee, dark malt, sweet malt, wood, alcohol - bourbon. Flavor is moderate sweet and bitter with a long duration, bourbon - vanilla - barrel, chocolate, chocolate - coffee, dark malt, wood. Flavor is moderate to heavy sweet and light bitter with a long duration, sweet malt, dark malt, rum, wood, raisin. Body is medium, texture is oily to watery, carbonation is soft to flat. [20190124]

Very dark brown colour with lasting head. Aroma and flavour have a lot of woody dryness. The sweetness of the bourbon comes through well in the aftertaste.
