Description
Our beer is and will always be clean and consistent with a strong focus on balance. We feel our four flagship offerings best represent Pollyanna and take pride in their year-round availability (we package everything in cans and bottles). We're constantly experimenting with local fruits and spices, seasonal lagers, barrel-aging, wild yeast, and bacteria. In our intimate and truly unique taprooms, we offer tasting flights, draft pours, and to-go 64oz growlers, 32oz howlers, or 32oz crowler cans. Our Lemont location offers a scenic look at the brewery, our Roselle location offers a wide array of wood barrels, Italian Foudres, and a smaller brewhouse for unique one-off offerings, and our St Charles location offers our largest taproom and a beautiful view of the Fox River. Keep an eye out for a constant rotation of special firkins and taproom only offerings at each location.

16 oz can from Beerhead, canned 6/20/22. Friendly, malty beer smell under the tab. Bright yellow pour with some unfiltered floaties, and a puffy white head. Taste is market and even a little lemony. Not as dry as a lager, of course. But a rather substation mouthfeel that it's bright color does not hint at. Very good for a kölsch, which one should always keep on hand for light beer loving friends.

Can, from Foxtrot, Chicago. Pours faintly cloudy amber with a large foamy beige head, caramel malt aroma, high carbonation, medium bitter caramel malt taste, smooth thin body, long caramel finish, smooth and tasty.

Can, from Trader Joe's, Chicago. Pours clear dark amber-copper with a large foamy beige head, caramel-coffee aroma, high carbonation, medium bitter caramel malt-coffee taste, smooth thin body, long coffee caramel finish. A nice amber ale.

Pour is a cloudy amber with a large tan head. Aroma is toasted malt with some cocoa powder. Flavor is more toasted malt a little cocoa powder and finishes a little tart. This was quite different than your usual amber ale.

Draft at Orange and Brew. Unlike the Spruce Tip from a firkin, this was on the tap tower. So there was more carbonation available. Pretty sure I wouldn't know the difference between the taste of fir and spruce, even when I'm having both at the same time. But an ESB color with a thin head. The big hop smell of the base beer is just there a little stronger than the Spruce. The carbonation does help this come in a little more heartily. And I can taste some more bitterness than the Spruce, but still not a big a hop load as the original.

Taster at Orange and Brew. The spruce seems to have mellowed the hop nose considerably. I'm showing a bit more haze, but it's kind of flat, as with most firkin pours. This comes in thinner, and with much less big hop taste from the original beer's hop load. Can't pick out what I might think spruce tastes like, but it mainly seems to have smoothed the beer out.

Draft at Orange & Brew. Dark golden color with haze, and a thin brownish head. Plenty of catty hop smell. A big hoppy APA flavor, with amber malts punching through. Not quite Imperial, but a pretty big beer for this style.

Pour is a red with a large white head. Aroma is caramel malt with some sulfur lager vibes. Flavor is more caramel malt and a bit of cherry smoke. Finish is a bit sweet but lager dry. OK red lager.

Taster #13 from Beer Under Glass, Rating #3,800! A big dark brown, almost black pour. Yes, it does smell like maple and bacon. a little smoke that gives it a note of Bamberg (and I am impressed that my phone spelled Bamberg correctly). And I get more of a bacon smoke smell with just a side of maple. There's a heady taste of alcohol, even leaving the bacon taste aside, it gives the sensation of a full-on imperial stout. And I thought I was only going to sample new-to-me brewers, but I can't resist another Fun Size.
