Description
On 24 January 2018 Michelle Shipman of Offbeat Brewery in Crewe put the brewery up for sale. Tom’s Tap and Brewhouse was born on 13 June 2018 when Michelle Shipman, Sean Ayling and Jacqui Ayling became the new owners of the brewery.

On tap at Tom’s Tap Crewe. Pours a cloudy peach yellow with a small frothy white head and good lacing. Tropical fruit is the mainstay of the aroma plus hints of wood and peaches. In the mouth it is quite sweet but with a little underlying sharpness. Floral hops to the fore in the flavour but with plenty of tropical fruit and pineapple too. Hints of tangerine and ginger come later leading to a slightly dry and sticky finish. Not the sort of beer I usually go for, but this is quite decent.

Cask at brewery tap. Pours golden yellow with a small frothy almost white head and good lacing. The aroma is mainly floral hops with hints of grapes and citrus. In the mouth it is quite bitter with a creamy texture but also a little underlying sweetness. Floral hops to the fore in the flavour as well alongside gooseberries. Some hints of spice and caraway come later – leading to quite a fruity finish. This is rather nice – plenty of taste for the strength.

Cask at The Green Goddess Easter Cask Beer Festival, Blackheath Royal Standard. Certainly a chocolate trifle nose, some strawberry sponge cake, vanilla. Tasty trifle flavours, splosh of raisin. Sweet desserty aftertaste. Good stuff.

Cask at The Green Goddess Easter Cask Beer Festival, Blackheath Royal Standard. Gold pour with a white head. Aromas of pineapple, kiwifruit, lemon marmalade. Taste is lemon marmalade, baked apple, peach. Interesting flavour combo .

On tap at The Green Goddess, Blackheath Royal Standard. Nose is dark chocolate, nuts,coffee, sweet tobacco. Taste is chocolate, cookie dough, raisin, nuts, more sweet tobacco. Malty sweet with a light alcohol burn.

Cask at Crewe Dog, Crewe – just labelled “Hillbilly Engineering” but the brewed confirmed which version it was. Pours a dark straw with a small foamy almost white head and good lacing. The aroma has floral hops, citrus and mango. In the mouth it starts off sweet but in due course a little underlying sharpness becomes evident. Flavour is mainly peaches, tropical fruits and oranges with hints of passion fruit and lemongrass coming through later. This is quite decent – the citrus is nicely restrained.
