Description
On 24 January 2018 Michelle Shipman of Offbeat Brewery in Crewe put the brewery up for sale. Tom’s Tap and Brewhouse was born on 13 June 2018 when Michelle Shipman, Sean Ayling and Jacqui Ayling became the new owners of the brewery.

On tap at Tom’s Tap, Crewe. Pours almost black with a small foamy cream head and some lacing. There’s malts, yeast, fudge and honey in the aroma. In the mouth it is fairly sweet with just a little underlying sharpness. Main flavours are dates, figs and roast malts plus hints of traditional hops and parkin. Cola and cherries come through later as well leading to a fruity finish. This is decent.

Cask at Tom’s Tap. Pours a light gold with minimal frothy off-white head and medium carbonation. There’s sweet candy and peaches in the aroma plus some hints of raspberry. In the mouth it is sweet and juicy (but not overly so). Flavour has floral hops, tangerine and traces of ginger and peel. Hints of stone fruits and mango come through later as well leading to a slightly dry finish. This is decent with hop influence being subtle.

On tap at The Green Goddess, Blackheath Royal Standard. Aromas of pineapple, peach, sweet citrus. Definitely a honeydew melon taste, splash more peach & pineapple. Oodles of sweet fruits with a light hoppy ending.

On tap at Toms Tap, Crewe. Pours a cloudy gold with minimal off-white head, good lacing and low carbonation. Floral hops to the fore in the aroma, plus hints of tangerine. In the mouth it is fairly sweet, but with also some bitterness and a deep creamy texture. Flavour has floral hops, pine, mango and traces of lime and tropical fruits. Finish is dry and slightly sticky. This is decent – very refreshing and quaffable.

On tap at Tom’s Tap Crewe. Pours a cloudy peach yellow with a small frothy white head and good lacing. Tropical fruit is the mainstay of the aroma plus hints of wood and peaches. In the mouth it is quite sweet but with a little underlying sharpness. Floral hops to the fore in the flavour but with plenty of tropical fruit and pineapple too. Hints of tangerine and ginger come later leading to a slightly dry and sticky finish. Not the sort of beer I usually go for, but this is quite decent.

Cask at brewery tap. Pours golden yellow with a small frothy almost white head and good lacing. The aroma is mainly floral hops with hints of grapes and citrus. In the mouth it is quite bitter with a creamy texture but also a little underlying sweetness. Floral hops to the fore in the flavour as well alongside gooseberries. Some hints of spice and caraway come later – leading to quite a fruity finish. This is rather nice – plenty of taste for the strength.

Cask at The Green Goddess Easter Cask Beer Festival, Blackheath Royal Standard. Certainly a chocolate trifle nose, some strawberry sponge cake, vanilla. Tasty trifle flavours, splosh of raisin. Sweet desserty aftertaste. Good stuff.

Cask at The Green Goddess Easter Cask Beer Festival, Blackheath Royal Standard. Gold pour with a white head. Aromas of pineapple, kiwifruit, lemon marmalade. Taste is lemon marmalade, baked apple, peach. Interesting flavour combo .
