Founded in 2010, Stillwater is an original nomadic beer project that utilizes the traditional brewery as if it were a studio - a place where beer becomes a canvas for creation, collaboration, and experimentation. For it’s founder Brian Strumke, nomadic brewing isn’t simply a job title. It’s a way to tell stories, engage with the world at large, and move through it on his terms.

In 2011, Strumke woke one morning to find himself anointed as one of the top new brewers in the world by Ratebeer.com - a proclamation that would change the trajectory of his life forever. Over the last 10 years, he built and scaled Stillwater® into an international business, capturing broad attention with it’s multidisciplinary approach and award-winning products crafted worldwide.

Formerly known as Stillwater Artisanal. Brian is from Baltimore, MD but has relocated to Seattle. Stillwater was tied to the Brooklyn, NY scene and importer / brewery Twelve Percent. Beers have been brewed at various breweries, but with many coming out of Twelve Percent's North Haven, CT brewery. Now Brian has brought Stillwater to the state of Washington and set down roots. Stillwater beers are brewed at Talking Cedar as of late 2023/early 2024.

A dozen years after pioneering the “nomadic brewing” model, Stillwater® has planted roots in the Pacific Northwest. For the first time, all production of its inventive and style-bending beers is concentrated at one location under founder Brian Strumke’s oversight and control: Grand Mound, Washington’s Talking Cedar. Opened by the Chehalis Tribal Enterprises in 2020, Talking Cedar is a 35,000-square-foot complex that houses a state-of-the-art brewery with a 60-barrel brew house, rows of 120-barrel fermenters, and multiple oak foedres.

12 oz can. Pours black with short dark tan head. Aromas of bourbon, chocolate nougat, dark caramel, treacle, and slick roasted malts. Flavors of rich dark caramel (almost like maple syrup) raisins, sweet bourbon, more chocolate nougat, and rich roasty malts. Quite sweet but definitely tasty and very good.

12 oz. can, pours jet black with a small brown head. Aroma is rich, with a wonderful, elegant vanilla bean character upfront, accentuated by the woody barrels, and with a bunch of dark sugars. Flavour is wondderfully rich, really showcasing that rich, elegant vanilla bean character along with deep dark sugars. Then the whole thing transitions to big bourbon barrels, before finishing modestly sweet, with tons of vanilla. Man, this is exquisite.

Grapefruit. Feels like light bretta. Pours golden with good head and lacing. Light bitterness. Nice stuff. Tap at Snally.

Bottle. Clear deep gold, there is a ring of white at the rim. Aroma of boot polish, grapes, some caramel and light dough. Not quite flat. Moody fruit, mild funk, some caramel edged dough and bread. A little acidic but not sour. Peppery oaked finish.

16oz (thx, Renny!) @ Matt's house. Appearance: almost clear pale golden with some white head. Aroma: rustic notes and some oak. Taste: along the same lines, lots of rustic notes, nice body, and noticeable nicely integrated tea notes. Overall: very good!

473mL can. Pours clear blonde with small white head. Aroma has rustic yeast, wood, some floral notes. Flavour has rustic wild yeast, wood, some floral tea leaves, sweet malts. Gentle acidity, in good balance. Nice yeast expression, working well with the tea. Nice complexity, interesting to drink. Fantastic.

Pale, bright, without much of a head. There's some wildness on the nose, with a bit of lactic notes, light brett notes. There's a touch of hop, or tannin. Not getting oolong specifically. Some sweetness in the finish, too.

16 oz. can, pours a clear pale golden with a small white head. Aroma has a nice, gentle, floral tea character, some light acetic notes, some funk, and rustic notes. Flavour is dry and funky, with lots of farmhouse funk, some citrus, gentle floral tea, and lots of oak. Oaky, funky, and complex. This is excellent.

Can. Almost black. Aroma: sweet, strong, good old bourbon, chocolate, coffee, vanilla, chocolate truffles, a little barrel sourness and blue plum jam. Taste: sweet, caramel, jam, chocolate, toffee, raisins, good bourbon, very good brew.
