Founded in 2010, Stillwater is an original nomadic beer project that utilizes the traditional brewery as if it were a studio - a place where beer becomes a canvas for creation, collaboration, and experimentation. For it’s founder Brian Strumke, nomadic brewing isn’t simply a job title. It’s a way to tell stories, engage with the world at large, and move through it on his terms.

In 2011, Strumke woke one morning to find himself anointed as one of the top new brewers in the world by Ratebeer.com - a proclamation that would change the trajectory of his life forever. Over the last 10 years, he built and scaled Stillwater® into an international business, capturing broad attention with it’s multidisciplinary approach and award-winning products crafted worldwide.

Formerly known as Stillwater Artisanal. Brian is from Baltimore, MD but has relocated to Seattle. Stillwater was tied to the Brooklyn, NY scene and importer / brewery Twelve Percent. Beers have been brewed at various breweries, but with many coming out of Twelve Percent's North Haven, CT brewery. Now Brian has brought Stillwater to the state of Washington and set down roots. Stillwater beers are brewed at Talking Cedar as of late 2023/early 2024.

A dozen years after pioneering the “nomadic brewing” model, Stillwater® has planted roots in the Pacific Northwest. For the first time, all production of its inventive and style-bending beers is concentrated at one location under founder Brian Strumke’s oversight and control: Grand Mound, Washington’s Talking Cedar. Opened by the Chehalis Tribal Enterprises in 2020, Talking Cedar is a 35,000-square-foot complex that houses a state-of-the-art brewery with a 60-barrel brew house, rows of 120-barrel fermenters, and multiple oak foedres.

1 pint can from JB's Brewhouse in Jersey. Pours jet black with a beige foamy head. Aromas & tastes of dark chocolate, coffee, roasted malt, prunes and vanilla. Moderate to medium body. Dry slightly sweet finish. Quite enjoyable

13oz tulip at Sovereign. Mostly clear, dark orange gold, sticky pour. Perfume, tropical, lemon, inviting sweet & acidy nose. Strong, wheatwine-esque, not bone dry as the description boasts. Solid acid in between a medium light roast, strong Citra & herbal, white grape, lemon, hinting pineapple with an earthy finish. Good+.

Tulip at Sovereign in DC. Terribly packed in here. Lightly hazy, medium gold, lingering froth. Heavy coriander nose, clay, sweet saline. Floral, rose, melon-y, stiff herbal hops, long astringent bretty dryness. Frothy, medium l-light volume, yeasty trail. Great.

150ml from a can from JB's Brewhouse fire sale. Pours dark brown with a beige head. Aromas & tastes of chillies, pepper & alcohol. Medium body. Burning finish. Challenging just for 150ml, ditched the rest of the can. My least favourite type of beer by some way.

Can from Beer52. Misted gold with moderate sized white foam. Some citric, white grape notes and mild wheat character in aroma. Taste has a sour grape , corn, wheat, herbs. Bittersweet finish with a slightly cloying mouthfeel. Its ok

Draught@TCBW2023. Hazy golden colour with a small white foamy head. Aroma is floral, fruity, some citrus, mild spruce and a bit wooden tartness to it. Flavour is floral, citrus, some spruce, mild tartness to it. Easy going.

Draught@TCBW2023. Orangeish golden colour with a mediumsized slightly off-white head. Aroma is floral, some fruity and mild citrus tones with some caramel and mild toffee tones too. Flavour is fruity, floral, citrusy and some biscuity and mild toffeeish sweet malty tones to it.

Bottle 0,33ltr: Hazy orange colored brew with an sweet bitter taste, hints of mango, cinnamon, speculoos and a little bit of pepper. According to the label its brewed at ’t Hofbrouwerijke, Beerzel, Belgium.

Draught@TCBW2023. Golden colour, small white head. Aroma is floral, fruity and some mild bready tones with a bit caramel. Flavour is sweet biscuity and floral tones with mild fruitiness as well. Mellow bitterness.
