Founded in 2010, Stillwater is an original nomadic beer project that utilizes the traditional brewery as if it were a studio - a place where beer becomes a canvas for creation, collaboration, and experimentation. For it’s founder Brian Strumke, nomadic brewing isn’t simply a job title. It’s a way to tell stories, engage with the world at large, and move through it on his terms.

In 2011, Strumke woke one morning to find himself anointed as one of the top new brewers in the world by Ratebeer.com - a proclamation that would change the trajectory of his life forever. Over the last 10 years, he built and scaled Stillwater® into an international business, capturing broad attention with it’s multidisciplinary approach and award-winning products crafted worldwide.

Formerly known as Stillwater Artisanal. Brian is from Baltimore, MD but has relocated to Seattle. Stillwater was tied to the Brooklyn, NY scene and importer / brewery Twelve Percent. Beers have been brewed at various breweries, but with many coming out of Twelve Percent's North Haven, CT brewery. Now Brian has brought Stillwater to the state of Washington and set down roots. Stillwater beers are brewed at Talking Cedar as of late 2023/early 2024.

A dozen years after pioneering the “nomadic brewing” model, Stillwater® has planted roots in the Pacific Northwest. For the first time, all production of its inventive and style-bending beers is concentrated at one location under founder Brian Strumke’s oversight and control: Grand Mound, Washington’s Talking Cedar. Opened by the Chehalis Tribal Enterprises in 2020, Talking Cedar is a 35,000-square-foot complex that houses a state-of-the-art brewery with a 60-barrel brew house, rows of 120-barrel fermenters, and multiple oak foedres.

Can from Drankenhandel Leiden. Aroma is fruity and citrussy with lots of lemon, white wine grapes, wheat, grass, lime, and mild funky notes. Flavour is tart and medium sour, dry finish, body is light to medium. Bright and very refreshing, easy yet interesting. A very fine Berliner.

Can from Drankenhandel Leiden. Aroma is tart fruits with lots of juicy citrus, tangerine, orange, notes of grapefruit and apricot. Flavour is tart with a pleasant sourness and a little bitterness in the finish. Body is medium. Lovely tart fruit bomb!

Can from Drankenhandel Leiden. Aroma is piney and fruity hops with citrus, lots of fruits, orange, creamy malt, pine resin, grapefruit, tropical fruits, mango, some herbal notes, and a touch of bubblegum. Flavour is moderate to medium sweet and relatively mildly bitter. Body is above medium. Very fruity with ample resinous notes, tropical and citrussy. Solid IIPA.

Can from Drankenhandel Leiden. Fruity aroma with lots of bright pineapple, zesty citrus, herbal notes with sage, tart tropical fruits, lime, hop, bitter fruit peel. Tart and moderate to medium sour flavour with a hoppy bitterness in the end. Body is medium. This shaking hands of sourness, pineapple, fruits, sage and hoppy notes really works for me. Quite tasty.

Can from Drankenhandel Leiden. Aroma is roasted and burnt malt with dark chocolate, coffee, a touch of caramel, and some liquorice. Sweet flavour with a decent moderate roasty bitterness. Body is medium to full. Solid Sweet Stout with some welcome roast, choc and coffee. There's some liquorice but it doesn't really bother me that much.

Can from Drankenhandel Leiden. Aroma is citrus, fruity hops, wheaty malt, pineapple, tart lemon, grass. Flavour is tart-ish with a moderate bitterness. Body is medium. Pretty nice, though I did not expect the tartness. Very fruity and citrussy.

Can from Beer Republic. Aroma is espresso, roasted malt, dark chocolate, caramel, burnt malt, sugary notes, tar. Flavour is sweet with a moderate to medium roasty bitterness. Light booze. Body is full. Sweet, but also nicely roasty and chalky with espresso and dark chocolate in particular.

Can from Just In Beer, Groningen. Aroma is tobacco, coffee, dark malt, some roast, chocolate, some lactose, mocha. Flavour is moderate sweet and lightly bitter. Body is medium with a little creaminess. Nice.

Can. Black, a cm of tan head. Aroma of cola, mocha, some roast. More roast upon a taste but it’s still mighty sweet before grinding bitterness attempts to reel it back at the end. A bit disjointed. Very strong for what it offers.
