Description
Cider apples come in a wonderful array with hundreds of shapes, colours and sizes. Each variety brings its own distinct character to cider. If you respect the natural alchemy of cider-making, allowing enough time for the flavour notes to slowly reveal themselves, we believe that each cider apple has a unique song to sing.
Making cider from fresh juice, there is one production each year, which starts when the fruit is harvested in the autumn. We are 100% committed to this juice and have just one opportunity to make a vintage of delectable ciders and perries for the following year.
We add winemakers' yeast to the fresh juice and it is stored in the barn where it slowly ferments. You can hear it bubbling away, slower and quieter when the temperature drops in deepest winter.
As the first blossom is finally appearing on the apple trees, the cider in the barn is racked off into a new vessel for a secondary fermentation. This last stage gives smoothness and balance to the cider, by which the full complexity of flavour can shine through.

Gravity dispense (bag-in-box) @ GBBF 2016, [ Great British Beer Festival 2016 ], London Olympia, Hammersmith Road, London, England W14 8UX. [ As Apple County Brown Snout (3) ].ABV: 7.0%. Hazy matt medium orange colour with a fizzy, virtually none lacing, fully diminishing head. Aroma is moderate to light heavy apple, sweet apples, scrumpy apples, apple pie, caramelized apples. Flavor is moderate sweet and light to moderate acidic with a average duration, tart apple, caramelized apple, apple pie, medium dry. Body is medium, texture is watery, carbonation is flat. 500ml bottle from Beer Revolution. Golden colour, white foam head that dissipates away and aroma of musty apple & barnyard funk. Taste is fruity, apple, bittersweet, with woody oak, vanilla and mucky barnyard, funky. Oily mouthfeel, medium bodied, medium carbonation, semi-dry astringent tannic finish. Quite drinkable.

Cask @ Southampton Arms, Gospel Oak NW5. Pours a hazy golden pale orange color with a small white head. Has a fruity spicy apple aroma. Fruity spicy fry apple flavor. Has a fruity spicy dry apple finish.

500ml bottle from Iechyd Da, Caernarfon. Pours clear golden with no head. Aromas of dry, tart apples, apple skin. Taste is dry, tart apple. Dry finish.

330ml bottle from Stori, Bala. Pours a deep red, pinkish white head. Aroma of raspberry pips, apple fruit. Taste is fairly heavy on the raspberries, moderately sweet although a little artificial. Some apple juice coming through but it’s mostly about the raspberry syrup. Not bad.

330ml bottle from Stori, Bala. Pours a generally clear red. Aroma of red apple, soft rhubarb. Taste is light, smooth and good integration of rhubarb with the apple fruit. Expected the rhubarb to be quite subtle but it makes its presence known. Not bad.

Tap @ Stori, Bala. Pours a deep purple, vibrant blackcurrant aroma. Taste is fairly heavy on the blackcurrant, quite rich and syrupy sweet. A little too much syrup added in this batch perhaps as seems to dominate things too much.

Box @ Stable, Cardiff. Pours murky muddy orangey brown. Initial sour with subsequent mushy apple pulp. Tongue sucking tannins with a lightly scuzzy farmhouse feel. Tastes quite similar to Ty Gwyn’s Naughty Horsey cider.

Bag in a box at Darlington CAMRA 2016 Beer Festival at the Forum. Gold amber colour, no head and aroma is apple, barnyard, band-aid. Flavour is mellow apple, barnyard, rubber, with drying tannins. Medium bodied, low carbonation, dry tannic finish. Quite drinkable.

Draught at Number Twenty2 Darlington. Hazy brown amber colour, no head and fruity apple aroma with light funk. Taste is bittersweet apple, apple skin, some biscuit, hay, rubber, barnyard and drying tannins. Medium bodied, low carbonation, dry tangy tannic finish. Quite drinkable.
